How To Make Sourdough Croutons (Homemade)

Homemade sourdough croutons are made from sourdough bread, which is known for its distinct tangy flavor and chewy texture due to the fermentation process it goes through. These croutons are small, crispy, and flavorful cubes of old, stale or toasted sourdough bread that add texture and taste to many dishes.

To make sourdough croutons, first pick out your sourdough bread, ideally stale and old. Then, you’ll slice the crispy bread into cubes of croutons. If your bread isn’t stale, leave it out, as staling the bread is important because it helps the croutons hold their shape and develop a satisfying crunch when toasted.

Next, the best homemade croutons require tasty seasoning! With olive oil, you’re going to whisk together: garlic powder and Italian seasoning. Toss your croutons in your seasoning and transfer to a baking sheet and bake for 10-12 mins, tossing every 5 mins or so. Then transfer to a wire cooling rack and sprinkle with salt!

These delicious homemade sourdough croutons can be cooked in 10 mins at home using sourdough bread cut into crouton shapes.

Ingredients
  • 4 slices old or stale sourdough bread, cut into cubes
  • 3 tbsp olive oil or melted dairy-free butter
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ¼ tsp sea salt
  • ¼ tsp freshly ground black pepper
Instructions
  1. Preheat the oven to 375F and line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a medium mixing bowl, whisk together; vegan butter or olive oil, garlic powder, and Italian seasoning
  3. Add bread cubes and toss until coated. Season with salt and pepper and transfer to the prepared baking sheet.
  4. Bake for 10-12 minutes, tossing every 5 mins or so. Transfer to a wire cooling rack and sprinkle with some flakey salt.
Notes
Store in an airtight container for up to 2 weeks
Freeze for up to 2 months.

Instructions

TIPS:
To make a salad dressing: Whisk together 1 tbsp ranch powder with ½ cup plant-based mayo, 2 tbsp plant-based milk, and optional 1 tsp apple cider vinegar.
To make a Dip: Whisk 1 tbsp ranch powder ½ cup vegan sour cream (link ours), or vegan mayo.
Whisk 1 tbsp ranch powder with ½ cup vegan yogurt, and 1 tsp lemon juice and grated cucumber for a refreshing yogurt sauce.
Use 1 tbsp in your favourite breading for breaded tofu.

I’m going to show you how to make easy Adventist haystacks! I use to grow up eating haystacks as my family brought haystacks to potlucks on Saturdays that we would eat together after church or Pathfinders, which is like the Adventist youth group.

What are Adventist haystacks? It’s a traditional Seventh-Day Adventist meal that’s essentially a taco salad and every area of the world has its own version and has endless combinations of tasty toppings.

How To Make Adventist Haystacks

What’s great about making a haystack is that you can basically make your taco salad with whatever ingredients you want or have accessible as long as it towers up like a haystack. Haystacks were created by an Adventist woman named Ella May Hartlein, who brought together her favourite tex mex ingredients together and brought it to her church picnic potluck, thus creating this tex mex taco salad we call Haystacks.

The first thing you need to make an Adventist haystack are beans or chilli that you can heat up. If you’re making haystacks for yourself, you can just build your haystacks however way you want to make your taco salad. I usually build it with whole or crunched-up tortilla chips (or Fritos) onto the plate. Add chilli or beans and then top with veggies one layer at a time, finishing with salsa and/or sour cream and green onion or cilantro.

If you’re making haystacks for a potluck or gathering, put all toppings and sauces into separate bowls. That way you can put all ingredients on the table or counter and allow everyone to grab a plate and assemble their own Haystacks, by placing a hand full of whole or crunched-up tortilla chips onto the plate. Add chili or beans and then top with veggies one layer at a time, finishing with salsa and/or sour cream and green onion or cilantro.

Eat with a fork or use your chips to enjoy. It’s that easy.

Instructions
  1. In a small bowl whisk together butter, grated garlic, basil, and oregano. Set aside.
  2. Preheat your air fryer to 400F, or oven to 350F.
  3. Flour a clean surface and roll out your dough. Knead to form a smooth ball, and then divide the dough into roughly 30-gram balls.
  4. Flatten each ball, wrap it around a cube of cheese, and roll back into a ball.
  5. Oil the bottom of the air fryer, or air fryer pan with cooking spray or oil, and arrange the dough balls about ¼ inch apart. If using an oven, line a baking sheet with parchment or a silicone baking mat.
  6. Brush the top of each dough ball with some garlic butter.
  7. Bake for 5-7 mins, then brush with more garlic butter and bake for another 5 mins, repeat until your balls are golden.
  8. Meanwhile, heat your marinara in a small pot or pan, then transfer to a small bowl.
  9. Brush the balls with the remaining garlic butter, top with coarse sea salt, and serve on a serving plate with the marinara.

  1. In a large bowladd; cheese, cumin, nutritional yeast, paprika, garlic and onion powder. Using a ricer or a potato masher, mash potatoes in the bowl and combine with spices and cheese. Taste, and season with salt and pepper.
  2. In a dry skillet or microwave warm the tortillas, and cover with a towel.
  3. One at a time, spread about one heaping tablespoon of potato onto half of a tortilla, fold it closed, and secure with a toothpick.
  4. In batches, brush or spray each side of the tacos lightly with oil or cooking spray and place them into the air fryer.
  5. Fry at 380F for 10-12 mins, or until crispy, flipping once.
  6. Serve 3 tacos each topped with toppings of choice.

To Bake: Preheat oven to 400F and bake tacos for 10-12 minutes, flipping once, until crispy.

Deep fryer or stove-top frying: do not spray or brush the tacos with oil for this method. Heat oil in a deep fryer or a large pan, over medium-high heat (325F for the deep fryer). In batches, fry tacos for 2-4 minutes, or until crispy, flipping once.

Vegan Cobb Salad Recipe

“The best salads are the ones with the least amount of greens” – Candice Hutchings. As ironic as it sounds, I am guilty of enjoying my soups and sandwiches more than my sides of greens. That is why I have created a salad that has a lettuce to toppings ratio of 1:9.

A “cobb salad” is a classic American dish that is typically made with a bed of lettuce, covered up with toppings like cherry tomatoes, chopped bacon, chicken, avocado and other vegetables, served with blue cheese/red wine vinegar dressing. You can taste the blend of creamy and flavourful from all the different textures in this salad. This is a veganized version of it #happyveganuary.

Alternative ways to make this recipe:  

You can add all your favorite toppings! You are definitely not restricted from following the classic version of this. Use what you might already have in the kitchen. Some great options are avocado, chopped cucumber, vegan chicken pieces, etc.

A cobb salad is a hearty bowl of salad that will always feel like a full meal. It is packed with high fibers and a source of essential nutrients to give you the fuel you need to start the day. Today I’m sharing with you my beautiful one-pan roasted greek-styled potato recipe. This recipe uses simple ingredients, and most of them are probably already in your fridge or pantry. You can serve them with a variety of veggies, vegan feta cheese, and a main, like my Vegan Donairs.Greek Potatoes Vegan & Gluten-Free

INGREDIENTS FOR GREEK POTATOES (VEGAN):

HOW TO MAKE GREEK POTATOES:

  • Preheat your oven to 425F.
  • In a lipped baking tray or roasting pan, combine; olive oil, lemon juice, broth, oregano rosemary, and pepper. Use a fork to mix it together, you can also do this in a bowl and add it to the tray, but why dirty more dishes?
  • Add chopped potatoes and toss well coat. Sprinkle with salt and arrange the potatoes in a single layer on the pan.
  • Place the potatoes into the oven to roast for 20 minutes.
  • Take the potatoes out of the oven, and sprinkle with the minced garlic, turn them and spoon some of the leftover liquid over them.
  • Arrange them into a single layer again, and roast for another 20 mins, or until the potatoes are golden-brown.
    Serve with chopped herbs and any remaining liquid in the pan.

This Mexican street corn salad is a simple recipe for a classic Mexican favourite. You can make esquites with canned corn if that’s all you have at home, but I recommend corn from the cob.

What’s better to dip corn chips in? MORE CORN. This vegan Mexican street corn salad dip is a refreshing side to accompany taco night, a backyard barbecue, or a weekend fiesta.

HOW TO MAKE VEGAN ESQUITES

INSTRUCTIONS FOR VEGAN ESQUITES

  1. To make this Mexican corn salad, simply mix together vegan mayo or sour cream, garlic, and lime juice in a small bowl.
  2. In your serving bowl, combine the corn, onion, cilantro, vegan cheese, and chili powder.
  3. Mix the sauce into the other ingredients, garnish with additional cilantro and chilli powder.
  4. Serve with chips as a dip, as a side salad, or as a filling in tacos!

INSTRUCTIONS FOR WATERMELON ‘FETA’ MINT SALAD

To prepare this salad, spiralize a cucumber, and cut 3 cups of watermelon into cubes. In a large bowl, whisk together the juice of a lime, olive oil, and a pinch of salt. Add cucumber, watermelon, diced red onion, cubed avocado, crumbled vegan feta cheese, and mint to the bowl. Very gently, toss everything together to mix and coat everything with the dressing. Taste and add additional salt if needed. Add more mint leaves and vegan feta on top to garnish.

Vegan Mexican Street Corn. Perfect for your vegan Cinco de Mayo party, or if you’re looking for some fresh and easy vegan BBQ ideas this summer. Whether you roast them in the oven or atop your grill, these are going to be a crowd pleaser! These are often cut in half and served as an appetizer in Mexican restaurants, but are also fantastic alongside, tacos, burritos or whatever you love to cook at your meat-free BBQ.

If you do not have a BBQ, not to worry! You can roast corn in the oven. It’s actually one of my favourite ways to eat corn!

How to roast corn in the oven: Preheat oven to 400F. Place corn directly onto the rack of your oven and roast for 20 mins.

If using a BBQ: Cook the corn on the grill until it is cooked through and has light charring, about 20-30 mins. Keep warm.

To make vegan Mexican Street Corn Simply; Cook the corn according to your preference, stove or grill. Meanwhile, in a medium sized bowl whisk together the cashew sour cream, vegan mayo, minced garlic, cilantro, and salt until smooth. When the corn is ready and cooled enough to handle, but still warm; spread the cream mixture all over each piece of cooked corn and garnish with vegan cheese of choice (I like to use my Vegan Feta Recipe), a sprinkling of chili powder, cilantro, and lime wedges.

First, you spread your toasted bread with vegan cream cheese, top with smashed avocado, and then sprinkle Trader Joe’s Everything But The Bagel Seasoning on top! In 2 mins, with 4 simple ingredients, you have an easy Avocado Toast that tastes like an Everything Bagel — so simple and delicious!

  2. Pan fry the veggie bacon with a b it of oil, and crumble with your hands or chop with a knife.
  3. Meanwhile, toast your bread slices and spread with smashed avocado.
  4. Top the avocado toast with a hefty spoonful of tofu scramble and crumbles of cooked vegan bacon and a handful of your favourite vegan cheese. I used Sheese Feta-style.

First, you want to create a corn salad with corn kernels, halved cherry tomatoes, lime juice and cilantro. Then make an avocado toast like you usually would and top it with a pile of the corn salad, and your favourite vegan cheese. I used a vegan feta for this recipe! And there you have it! A Mexican-inspired avocado toast.

These tater totchos are made with veggie ground round, vegan cheese, corn, jalapeños, cherry tomatoes, easy guacamole, vegan sour cream and cilantro.

To begin making this tater tot nachos recipe, you first want to bake your fave tater tots! Next, take veggie ground round and heat it up on medium high heat. Sprinkle any organic taco seasoning on top and add a lit bit of water. Cook until it’s heated through. It will start smelling like a fiesta in your kitchen! 😉

After you cook your tater tots, place them into a casserole dish to start the nachos process. Once your veggie ground round is browned, add it on top of your tater tots; spreading it out.

Next, add some corn, vegan cheese shreds, and toss it into the oven. You can also use your fave vegan cheese sauce instead. You can literally load whatever you want that you would typically add on your nachos.

Once your cheese is melted, take it out of the oven and top your tatchos with some sliced or pickled jalapeños and chopped cherry tomatoes (or salsa). Next, add a pile of vegan sour cream and a pile of guacamole on top to dip your tots in.

For the final touches, garnish your vegan tatchos with green onions and cilantro. And voilà! The best Tater Totchos Recipe for your movie night or party appetizer!

  1. Preheat the oven to 350°F.
  2. Bake or air-fry the tater tots as per package instructions then arrange them in a single layer on a lined baking sheet.
  3. Heat veggie ground round in pan on medium-high heat. Sprinkle the taco seasoning on top of the ground round and add a lit bit of water, about ¼ cup. This is just to help provide moisture and infused the ground round with the seasoning. Cook, stirring constantly until it's heated through.
  4. Sprinkle the ground round over the arranged tater tots then top with corn and cheese sauce (my recipe here), or cheese shreds.
  5. Bake the totchos until the cheese is melted, 5-10 minutes.
  6. Remove the tochos from the oven and top them with the sliced tomatoes, and jalapeno slices.
  7. Add a pile of vegan sour cream and a pile of prepared guacamole on top to dip your tots in.
  8. Garnish your vegan totchos with green onions and cilantro.
  9. Serve immediately

VEGAN TRUFFLE MAC & CHEESEToday, I’m going to show you how to turn basic vegan mac & cheese into a creamy vegan truffle Mac & Cheese! Is there anything more bougie on a menu than anything tossed or drizzled with truffles or truffle oil?  No, no there is not. And so, I present Truffle Mac & Cheese.

This recipe is perfect if you’re looking to get more from your basic mac & cheese OR if you’re having dinner with friends and want a recipes that simple but also on the fancier side of life. By making this Truffle Mac & Cheese, your friends will think that you’re some kind of culinary expert, and hey, maybe you are! But if you’re not- YOU.ARE.WELCOME. This tasty dish is the definition of fake it til you make it.

This vegan truffle mac & cheese will fill your mouth with creamy, cheesy and truffle deliciousness. When you have a basic vegan mac & cheese recipe (or choose your fave macaroni and buy or make a vegan cheese sauce at home), all you need are 4 other ingredients to make this gourmet truffle Mac & cheese recipe.

How To Make Vegan Truffle Mac & Cheese

To make this vegan truffle mac & cheese, you first want to make a basic mac & cheese first by taking macaroni pasta and a vegan cheese sauce! You can get my #1 Cheese sauce recipe on page 34 of my Edgy Veg Cookbook, or my vegan nacho cheese sauce recipe online (which you can make in bulk and use for mac & cheese or other cheesy recipes).

So first, heat up some avocado oil in a skillet, and then we’re going cook up some mushrooms. So put 1 cup of sliced mushrooms in your skillet and cook them until they turn slightly brown. Then reduce the heat and let them simmer for about five minutes.

Next, add your cooked macaroni in a pot, add one teaspoon of truffle oil. I suggest starting with a teaspoon, and depending on your sensitivity to truffles, you can add more oil if you want. Truffle oil is a pretty powerful aroma so I would start small and then go from there. And now mix them together.

Afterwards, take your warmed vegan cheese sauce and add it in. Really coat each noodle so no n00d is left behind.  Once it’s mixed, pour your veganized truffle mac & cheese into bowls and top it with some chopped parsley, and throw those browned mushrooms on top. And then feel free to add a drizzle of truffle oil!

And that’s how you make an easy, yet bougie, vegan truffle mac and cheese that’s also soy free and nut free!

Instructions
  1. Make your favourite basic vegan mac & cheese recipe (usemy fave store boughtor get macaroni pasta & use my cheese sauce recipe)
  2. Heat up avocado oil in a skillet over medium high heat.
  3. Add sliced mushrooms to the skillet and cook, stirring constantly, until slightly browned, about 3-5 minutes. Then reduce heat to low and let them simmer for about five minutes, or until browned. Set aside.
  4. In a bowl or large bowl, toss cooked macaron and 1 teaspoon of truffle oil. Taste, and add more truffle oil based on your preference.
  5. Add the warmed vegan cheese sauce of choice to the pot or bowl and mix well. Taste and add more truffle sauce as necessary.
  6. Divide your truffle mac & cheese between 4 bowls, and top with parsley and browned mushrooms.
  7. Optional: Add a drizzle of truffle oil
