I was amazed at how good the cheese sauce was! It was my first time making vegan cheese without any nuts, it was awesome to see that it had such good flavor and texture without being as calorically dense as nut based cheeses. I added cumin and smoked paprika, next time I’ll also add chili powder to the cheese!

I do want to mention an issue I had when making these so others won’t have the same problem. I wanted to double the recipe as it was for a party, so I made two baking sheets worth. I rolled the first batch and set them aside while I made the second batch. By the time I finished rolling the last of the taquitos, the first ones had the tortillas cracking and falling apart. So get them oiled and in the oven ASAP after rolling! They were still delicious, just not very nice looking for a party!

Thanks for the tasty recipe! Chicken taquitos used to be something my mom ate often before I convinced her to become (mostly) vegan, and she really enjoyed these! I will be making them again!
