How To Make Sourdough Croutons (Homemade)

Homemade sourdough croutons are made from sourdough bread, which is known for its distinct tangy flavor and chewy texture due to the fermentation process it goes through. These croutons are small, crispy, and flavorful cubes of old, stale or toasted sourdough bread that add texture and taste to many dishes.

To make sourdough croutons, first pick out your sourdough bread, ideally stale and old. Then, you’ll slice the crispy bread into cubes of croutons. If your bread isn’t stale, leave it out, as staling the bread is important because it helps the croutons hold their shape and develop a satisfying crunch when toasted.

Next, the best homemade croutons require tasty seasoning! With olive oil, you’re going to whisk together: garlic powder and Italian seasoning. Toss your croutons in your seasoning and transfer to a baking sheet and bake for 10-12 mins, tossing every 5 mins or so. Then transfer to a wire cooling rack and sprinkle with salt!

These delicious homemade sourdough croutons can be cooked in 10 mins at home using sourdough bread cut into crouton shapes.

Ingredients
  • 4 slices old or stale sourdough bread, cut into cubes
  • 3 tbsp olive oil or melted dairy-free butter
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ¼ tsp sea salt
  • ¼ tsp freshly ground black pepper
Instructions
  1. Preheat the oven to 375F and line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a medium mixing bowl, whisk together; vegan butter or olive oil, garlic powder, and Italian seasoning
  3. Add bread cubes and toss until coated. Season with salt and pepper and transfer to the prepared baking sheet.
  4. Bake for 10-12 minutes, tossing every 5 mins or so. Transfer to a wire cooling rack and sprinkle with some flakey salt.
Notes
Store in an airtight container for up to 2 weeks
Freeze for up to 2 months.

Today I’m showing you how to make an easy vegan calamari recipe to impress vegan and non-vegan guests, or just cook them up for yourself for a fabulous dinner for one.

This bite-sized appetizer has a delicate texture similar to squid and when seasoned and fried, takes on a full calamari flavour!

INGREDIENTS FOR CALAMARI (VEGAN):

  • King Oyster Mushrooms
  • Olive Oil
  • Kombu (optional)
  • Salt
  • Flour
  • Cornstarch
  • Old Bay Seasoning
  • Soy Milk
  • Vinegar

These vegan calamari are made of king oyster mushrooms with seasoning that makes them taste like fried calamari!

Ingredients
  • 10 king oyster mushrooms, sliced into ¼-inch slices
  • 1 tbsp olive oil
  • 1 piece of kombu, optional
  • ¼ tsp salt
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • ½ tsp old bay seasoning
  • ½ cup unsweetened soy milk
  • 1½ tsp vinegar
  • vegetable oil, for frying
  • 2 lemon wedges, as garnish
  • dip sauce of choice
Instructions
  1. Start by boiling water in a kettle or in a small saucepan. Then, use a ½-inch round metal straw, cookie cutter or a cake piping tip to make holes in the center of each mushroom, to create calamari-looking rings.
  2. Place the calamari mushroom rings to a small saucepan and cover the mushrooms in water and bring the water to a boil.
  3. Once boiling add 1 tbsp olive oil, ¼ tsp salt, and kombu.
  4. Add mushrooms and boil for 15 minutes, or until they are dark in colour and most of the water has dissolved. Remove from heat and let them cool.
  5. While calamari is boiling, combine the flour, cornstarch, and old bay seasoning together in a bowl. Pour half of the mixture into a second bowl.
  6. In a third bowl whisk together soy milk together with the vinegar and set aside for 5 minutes to create soy buttermilk.
  7. If using a deep fryer: heat frying oil to 350F.
  8. If using a deep pan: pour enough oil to measure 3 inches inside the pan and heat the oil over medium-high heat to 350F.
  9. When the oil is hot, dredge the mushrooms in the flour mixture and shake off any excess as you place them into the bowl with the soy buttermilk.
  10. Transfer them then to the second bowl of seasoned flour coating them, completely and place on a wire cooling rack.
  11. In batches, fry the calamari for 2-3 minutes or until golden brown on both sides, allowing the oil to return to 325F between batches.
  12. Transfer fried calamari to a wire cooking inside a baking sheet, to allow excess oil to drip.
  13. Serve with caper aioli, garlic aioli, or tartar sauce.

Instructions
  1. In a small bowl whisk together butter, grated garlic, basil, and oregano. Set aside.
  2. Preheat your air fryer to 400F, or oven to 350F.
  3. Flour a clean surface and roll out your dough. Knead to form a smooth ball, and then divide the dough into roughly 30-gram balls.
  4. Flatten each ball, wrap it around a cube of cheese, and roll back into a ball.
  5. Oil the bottom of the air fryer, or air fryer pan with cooking spray or oil, and arrange the dough balls about ¼ inch apart. If using an oven, line a baking sheet with parchment or a silicone baking mat.
  6. Brush the top of each dough ball with some garlic butter.
  7. Bake for 5-7 mins, then brush with more garlic butter and bake for another 5 mins, repeat until your balls are golden.
  8. Meanwhile, heat your marinara in a small pot or pan, then transfer to a small bowl.
  9. Brush the balls with the remaining garlic butter, top with coarse sea salt, and serve on a serving plate with the marinara.

As a result, we coined the term “beegans” for vegans who still eat honey in their diets as an exception. However, if you would like to eliminate honey in your diet and are curious about the “no-bee alternative”, this recipe is a great way to start. Grilled Salted Oatmeal

Do you ever get bored of cooking the same way, using the same method every time? I totally get it! That is why I decided to test out different recipes on my BBQ Grill and to my surprise, I made the best Grilled Salted Oatmeal Chocolate chip cookies! Yes, I have made grilled salads, pizzas, and now cookies on my Napolean. Vegans have no excuse to not participate in BBQs anymore!

 Pro Tips:

  • Preheat your grill for 10-15 min.
  • Make sure you’re baking over indirect medium heat. If you can’t grill indirectly: place a metal cake pan upside down or use bricks on the grills and then place the baking sheet on top to bake.
  • Don’t open the grill before the time is up, this will allow too much heat to escape.
  • In-between batches, make sure you let the grill come back up to temperature (350F).

If you thought vegans couldn't join in all the BBQ festivities, I am about to prove you wrong! Because I am going to show you how to make cookies on a BBQ Grill. Yes, this is not your average salted oatmeal chocolate cookies baked in an oven!

Ingredients
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp kosher salt
  • ½ cup rolled oats
  • ¼ tsp cinnamon
  • ½ cup (1 stick) unsalted vegan butter, room temp
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • ½ tsp vanilla extract
  • 3 tbsp aquafaba
  • 6 oz dark chocolate, roughly chopped
  • optional: ½ cup walnuts, roughly chopped
  • Coarse sea salt
Instructions
  1. Preheat grill or bbq to between 350F and 375F, and grease a baking sheet.
  2. In a small mixing bowl, combine the flour, baking powder, kosher salt, rolled oats, and cinnamon.
  3. In a large mixing bowl, combine the butter, brown sugar, and granulated sugar. Using an electric hand mixer, beat together the butter and sugars until light and fluffy, 2 to 3 minutes. Beat in the vanilla. Add the aquafaba one tablespoon at a time and beat until well combined.
  4. Using a spatula, gradually add the flour mixture into the batter-sugar mixture. Mix until just combined. Fold in the chocolate and walnuts, if using.
  5. Spoon tablespoon-size balls of dough onto the baking sheet, leaving about 2 inches between the dough balls.
  6. Scoop the chilled cookie dough onto the baking sheet. Make sure to leave about 2 inches between scoops.
  7. Place the baking sheet on the grill, close the lid and grill for 10-13 mins, or until just beginning to golden.
  8. Remove the cookies from the oven and sprinkle each one with a few grains of sea salt … it’s really important to do this while the cookies are hot so the salt sticks. Let the cookies cool for a couple minutes, then transfer to a cooling rack. Repeat with the remaining dough.

  1. Combine ¼ cup granulated sugar and 1 tbsp citric acid in a small bowl.
  2. Combine 2 tbsp granulated sugar and tajin to taste in another.
  3. Now place both sugars onto a plate in a straight line the length of the rice paper. Set aside.
  4. On a lipped plate pour warm water & lime juice.
  5. One at a time, soak rice paper in the warm water for 20 seconds, or until soft, and then place flat onto a cutting board.
  6. Add fruit to one end of the rice paper half in a straight line across the long side, and roll it up tightly into what will resemble a straw.
  7. Now you can roll the rice paper in the sugar variations, and place on a plate to serve.

Well lucky for you, I have found the perfect recipe that will not disappoint! Grab your cooking gloves because we are about to make the best cookies you’ve ever had.

Instead of using cornflakes, you can use pretzels, caramel pieces, or any of your favorite cereal brands to add that yummy, crispy texture. Oatmeal is also a great choice if you want a healthier alternative.

these cookies are the most classic, perfectly chewy cookies one has yet to experience. If you have never tried the Momofuku Milk bar because it's not vegan, well here is your chance to have a bite at it.

Instructions
  1. Prepare 2 cookie sheets with parchment, not a silicone baking mat (they make the cookies spread too much).
  2. At a medium-high speed, cream together dairy-free butter, white sugar and brown sugar for about 3 minutes. (in a stand mixer you can use the paddle attachment.) Scraping down the side of the bowlas necessary.
  3. Add aquafaba and vanilla and beat for 8 minutes on high, scraping down sides of thebowlas necessary.
  4. At a low speed, start to add in the flour, baking powder, baking soda, and salt, and mix until the dough just comes together about 1 minute.
  5. Add cornflakes and chocolate chips, and mix on low until just mixed, about 30-45 seconds.
  6. Gently stir in the marshmallows.
  7. Using a large 2¾-ounce scoop, or a regular cookie scoop portion out the dough
  8. onto the prepared cookie sheets, at least 4 inches apart* (see note). Press down the top to flatten them and cover with plastic wrap.g
  9. Freeze for a minimum of 1 hour.
  10. Preheat oven to 350F.
  11. Bake cookie dough for 18 minutes., rotating the cookie sheet halfway through.
  12. The cookies are ready when the edges are browned on edges and golden in the center.
  13. Let the cookies cool completely on the cookie sheet.
Notes
* NOTE: The original recipe says to use a large 2¾-ounce scoop (or ⅓ cup) measure., which I did, but I also used a regular cookie scoop for smaller more manageable cookies. *

Do not bake the cookie dough from room temperature or they will spread out and you will have one giant cookie.

Healthy Peanut Butter Granola Bar

After a good workout, the granola bar is one of my favorite snacks to munch on. Unfortunately, many of the granola bars that are store-bought contain a lot of processed sugars and chemicals to extend shelf life. As a result, packaged granola bars are typically high in calories, filled with processed sugars, and have very little nutritional content. Nonetheless, granola bars can be a healthy snack depending on the brand, but making these at home is much healthier and more affordable than the premium prices you pay at the health food stores. Conveniently, you can store these snacks in your fridge for up to 1 week! Or make extra and freeze them for up to 2 weeks.

 

Alternative ways to make this recipe:

You can add dried fruits and additional nuts to this recipe. However, if you are allergic to peanuts, you can substitute the peanut with almond butter instead. The purpose of the nut butter is to make all the ingredients stick together. Otherwise, if you have a dietary restriction to all nuts, you can try seed butter like this one. You can also substitute chocolate chips with white vegan chocolate chips.

Peanut Butter Granola Bar

Peanut Butter Granola bars are well-known for their ridiculously delicious taste along with significant health benefits. Furthermore, the flaxseeds and chia seeds in this ingredient are also high in omega-3 fats that are essential for your brain health, eye health, and heart health! This delicious granola bar recipe will replace all your processed granola bars in your pantries. Say no more to packaged foods filled with sugar, say hello to healthy snacks packed with nutirious ingredients.

Instructions
  1. Line an8 x 8-inchpan with parchment paper.
  2. In a saucepan over medium heat, melt coconut oil. Whisk together; agave, peanut butter, and bring to a simmer for a couple of mins, stirring constantly. Do NOT boil! Remove from heat.
  3. Add oats, vanilla, crispy cereal, flax seeds, chia seeds, shredded coconut and salt and mix to combine.
  4. Transfer to an 8×8-inch baking dish, and spread out evenly.
  5. Cover with a piece of parchmentor plastic wrap and press firmly. This step ensures they do not crumble. You can use a glass to do this if you need some help.
  6. Allow the bars to cool in the fridge overnight or for at least 60 mins to form.
  7. Lift the solid block out of the pan using the parchment, and cut into bars.
  8. Keep in the fridge in an airtight container for up to 5 days, or freezer for up to 1 month.

Valentine’s Day is just around the corner and finding that sweet and romantic gift for that special someone might feel a little overwhelming. Luckily, I have created this simple & sweet treat you can make at home to add a little extra love without breaking the bank. This Valentine’s Day, try out these chocolate-dipped Oreo cookies you can wrap into a perfect gift. First, you want to use “yours” or “their” favorite oreo flavors, mine is the Original Chocolate and Golden Oreos. Then dip into the homemade vegan chocolate sauce, and top it off with pretty pink sprinkles for that finishing touch. Finally, you can wrap these treats with a handwritten card, I guarantee this will leave an unforgettable impression on your Valentine’s date.

Alternative ways to make this recipe:  

You can customize and diversify this recipe by using your favorite cookies. You can even use chocolate chip cookies, wafers or any of the vegan cookie snack options here. You can also use any chocolate dips depending on how sweet you want the dips. You can use dark, “milk” or white chocolate, and any sprinkles! You also replace sprinkles with chopped nuts or shredded coconuts.

Chocolate Dipped Oreos

Oreo cookies are one of those treats that became “accidentally vegan”, due to the results of the ingredients being more affordable.   1. Place sprinkles into a bowl or bowls depending on how many different types you have.
  2. Line a baking tray with parchment paper and set aside.
  3. Melt chocolate in a microwave or double boiler. I suggest making my white chocolate and then using it immediately from the blender.
  4. One at a time, dip a cookie into the white chocolate, allow the excess to drip off, and immediately dip, roll or top with sprinkles, and place them onto the lined baking tray.
  5. When they have all been dipped, place them into the fridge for 30 minutes or until the chocolate has fully set.

  1. In a medium saucepan over medium heat olive oil and sauté onion ad garlic for 1 minute.
  2. Add celery, a pinch of salt, basil, thyme, and crushed tomatoes and cook for about 5 mins or until onions are translucent.
  3. Add vegetable broth, and maple syrup and bring to a boil. Immediately reduce heat to a simmer. If you're short on time cook for 20 minutes. If you have time, cook for 40 minutes.
  4. Using a stand or immersion blender, blend until smooth.
  5. Stir in cream until combined. Season with pepper and salt to taste.
  6. Serve with a swirl of cream, chopped parsley and grilled cheese sandwiches or grilled cheese croutons.

So, how do you make chickpeas crispy? Let’s get started. You can choose to make them in a pan on the stovetop or bake in the oven. You can even pop these in the air fryer! You just need to dry off the drained chickpeas in a clean kitchen towel ahead of time, then toss them in olive oil and seasonings and cook until browned and crunchy!

You can make approximately 3 cups of crispy chickpeas with 2 cans. Depending on how many people will be enjoying these delicious treats, you can gauge about 1/3 cup per serving.

  1. Using a dishtowel, gently dry off the chickpeas. Set aside.
  2. Stovetop: In a medium-size pan, heat up olive oil over medium heat. Add chickpeas, nutritional yeast, and french onion soup mix and Cook, stirring frequently for 10 to 15 minutes, or until chickpeas become golden and crispy.
  3. Roasted: Preheat oven to 400F and place the oven rack in the middle of the oven. In a medium-sized bowl, toss chickpeas with olive oil, nutritional yeast, and onion soup mix. On a rimmed baking sheet, spread out the chickpeas in an even layer. Roast the chickpeas for 20 to 30 minutes, or until golden. Shaking the pan every 10 minutes.
  4. Enjoy on their own, in a salad, or to top soups.

Vegan Banana Bread Recipe

  1. Preheat oven to 350F, place the oven rack into the center and line a 9x5x3 bread pan with parchment paper.
  2. In a medium-sized bowl whisk together flour, baking soda, and salt.
  3. In a second bowl, cream together mashed bananas, sugar, yogurt, margarine, or oil and vanilla with a wooden spoon, hand mixer, or stand mixer.
  4. Fold the banana mixture into the flour mixture until the batter just comes together. Do not overmix.
  5. Transfer the batter to the lined loaf pan, and smooth out the top.
  6. Bake for 60-65 minutes, or until a tester (like a toothpick) inserted in the center comes out clean.
  7. Place the loaf (still in the pan)onto a wire rack, and allow it to cool completely.
  8. Serve on its own or with vegan butter
