These vegan calamari are made of king oyster mushrooms with seasoning that makes them taste like fried calamari!
Author:
Recipe type: Appetizer
Cuisine: Vegan
Serves: 2
Ingredients
  • 10 king oyster mushrooms, sliced into ¼-inch slices
  • 1 tbsp olive oil
  • 1 piece of kombu, optional
  • ¼ tsp salt
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • ½ tsp old bay seasoning
  • ½ cup unsweetened soy milk
  • 1½ tsp vinegar
  • vegetable oil, for frying
  • 2 lemon wedges, as garnish
  • dip sauce of choice
Instructions
  1. Start by boiling water in a kettle or in a small saucepan. Then, use a ½-inch round metal straw, cookie cutter or a cake piping tip to make holes in the center of each mushroom, to create calamari-looking rings.
  2. Place the calamari mushroom rings to a small saucepan and cover the mushrooms in water and bring the water to a boil.
  3. Once boiling add 1 tbsp olive oil, ¼ tsp salt, and kombu.
  4. Add mushrooms and boil for 15 minutes, or until they are dark in colour and most of the water has dissolved. Remove from heat and let them cool.
  5. While calamari is boiling, combine the flour, cornstarch, and old bay seasoning together in a bowl. Pour half of the mixture into a second bowl.
  6. In a third bowl whisk together soy milk together with the vinegar and set aside for 5 minutes to create soy buttermilk.
  7. If using a deep fryer: heat frying oil to 350F.
  8. If using a deep pan: pour enough oil to measure 3 inches inside the pan and heat the oil over medium-high heat to 350F.
  9. When the oil is hot, dredge the mushrooms in the flour mixture and shake off any excess as you place them into the bowl with the soy buttermilk.
  10. Transfer them then to the second bowl of seasoned flour coating them, completely and place on a wire cooling rack.
  11. In batches, fry the calamari for 2-3 minutes or until golden brown on both sides, allowing the oil to return to 325F between batches.
  12. Transfer fried calamari to a wire cooking inside a baking sheet, to allow excess oil to drip.
  13. Serve with caper aioli, garlic aioli, or tartar sauce.

I’m going to show you how to make an easy vegan Japanese Egg Salad to use in a sandwich, also called Tamago Sando! For this recipe, I’ll show you how to make vegan egg yolks to use for a Japanese-style egg salad!

All you need is ackee, olive oil, nutritional yeast, black salt (for eggy flavour), soy milk, vegan butter, tofu and vegan kewpie mayo (Japanese Mayo). If you don’t have store-bought vegan kewpie mayonnaise, you can easily make it using vegan mayo! I’ll leave my recipe for it below!

How To Make Vegan Japanese Egg Salad

How To Make Vegan Japanese Egg Salad

This vegan Japanese egg salad recipe is super egg and creamy, much creamier than regular egg salad. To make a Japanese egg salad sandwich, called Tamago Sando, you’ll need vegan Japanese milk bread. If you can’t find a vegan one in-store, there are recipes online to make vegan milk bread!

To make the vegan egg yolks, you’ll want to boil 1/2 cup of ackee for about 10 mins or until tender. Then blend the ackee in a blender with 2 tbsp olive oil, nutritional yeast and black salt. Puree all these ingredients until well combined. Add 1 tbsp of water at a time until you get the yolk-like texture and consistency that you prefer.

Vegan Japanese Egg Salad Sandwich

Now make your vegan Japanese egg salad! Mix in your vegan egg yolks with vegan kewpie mayo until combined! Cube 1/2 block of soft tofu and 1/2 block of medium tofu and fold into the vegan egg yolk and mayo mixture. and coat the tofu. Please in the fridge to chill. And voila! Vegan Japanese egg salad that you can serve whenever you want! Taste and season the tofu egg salad mixture with black pepper and serve on your vegan Japanese milk bread, sliced with vegan butter over one side of each bread slice. Traditionally, a Japanese egg salad sandwich trims off the discarded crust and the sandwich is cut in half diagonally so you have 2 triangles.

How To Make Tofu Tuna

Most vegan tuna recipes use chickpeas, but I discovered that shredded tofu is one of the best substitutes to get a vegan tuna lookalike! Plus I always have tofu in my fridge.

Like most “tuna”, the flavour is best when it sits in the fridge for a few hours, or minimum of 30 mins, for flavours to absorb, but it is also delicious when enjoyed right away. Tofu gives this recipe the best tuna texture and appearance and the chosen seasonings make it taste so much like the real thing!

The “sausage” in this vegan sausage roll is made from a combination of seitan meat and raw nuts, giving it a fantastic meaty and cheesy taste and texture. Then wrapped in a soft puffed pastry adding even more dimension to the texture and overall mouth-feel.

14. Mushroom Gravy

Gravy has its place all year round, but it really shines during the holidays. Gravy is also a great way to mask any cooking flops, so if something doesn’t turn out quite right, it’s all gravy baby! I put that stuff on everything.

15. Hot Honey Recipe

Drizzle on that kick of sweet and spicy you love on your favorite dishes! Honey is one of the controversial topics in veganism. This is because honey is made by bees and bees eat it to survive the winter season, and eating honey will eliminate the food supplies for the bees. As a result, we coined the term “beegans” for vegans who still eat honey in their diets as an exception. However, if you would like to eliminate honey in your diet and are curious about the “no-bee alternative”, this recipe is a great way to start. Don’t forget to try this on pizza, vegan fried chicken, or even as salad dressings.

Vegan Pecan Pie Recipe | Easy Vegan Thanksgiving Recipe

21. Pecan Pie

Turning the traditional pecan pie recipe into a vegan-approved dessert is not just ‘pie in the sky talk here. This delightful, down-to-earth dessert is easily achievable AND it’s heavenly! What makes this recipe different from the traditional pecan pie recipe is the vegan pastry dough base, the brown rice syrup to replace corn syrup, coconut sugar to replace regular refined sugar, and flax meal to substitute for eggs. I also highly recommend the vegan whipped cream to top it off.

22. Vegan Deep Fried Ice Cream Burrito

DId you know that you can enjoy ice cream in the winter? If you deep fry them of course. Vegan Grilled Club Salad

Summer is almost over, but that won’t stop me from grilling in my backyard! I don’t know about you, but I absolutely fell in love with my new grill this year and I can’t get enough of creating new recipes I have never tried before. Anything can taste delicious over the grill if you have the right techniques and flavors. For this recipe, I tried to replicate a club sandwich, using similar ingredients and cooking them in completely different ways. This quick and super easy recipe was inspired by a club sandwich of course, but I had to try something new and turn it into a grilled salad!

Vegan Mediterranean Mezze Bowl Recipe

The best way to make any salad bowl enjoyable is heavily influenced by the types of sauces you pair with it. One of my favorite go-to, savory recipes is the Mediterranean Mezze Bowl Recipe. This recipe contains 3 different flavors of creamy, rich and juicy all in one bite! These ingredients are sure to take your tastebuds on an adventure. We are going to veganize the Mediterranean experience with hummus, vegan tzatziki, and some roasted veggies.

I hope you enjoy this recipe as much as I do and incorporate this to your next appetizers menu.

Alternative ways to make this recipe:

You can add additional toppings like herbed tahini sauce or pickled onions on my other recipes!! I love to diversify my bowl with all of the sauce, add extra veggies, and dip it with naan bread. You can also make wraps with the same recipe and add vegan falafels to your customizable Mezza plate.

Mezze Bowl

Mezze is an easy vegan dish to make because it mostly uses raw ingredients. Except for the yogurt in tzatziki sauce, you can substitute the yogurt for a vegan alternative.

How many servings does this make?

You can make approximately 4 servings. This is a generous serving for sharing or to savour the sauces in the fridge for up to a week.

  1. Make the roasted tomatoes: Preheat your oven to 400F. Place tomatoes in a baking dish or lipped pan with olive oil, garlic powder, oregano, and salt. Toss to coat. Bake tomatoes for 10-12 mins, or until the tomato skins start to pop, blister, and char slightly.
  2. Make the tzatziki: In a small bowl combine yogurt, cucumber, garlic and salt. Set aside.
  3. Assemble bowls: Adding a little bit of everything to individual bowls and serve with pita or naan on the side. Or, add everything onto a table and let everyone build their own mezze bowl to their liking. This makes a great snack or easy lunch.

I’m going to show you how to make a creamy vegan Hungarian mushroom soup in under 40 minutes! Using 14 ingredients, this creamy Hungarian mushroom soup recipe is super easy and full of flavour! It’s also gluten-free!

This soup recipe makes a large batch and can be frozen or kept in the fridge and later warmed up for cozy healthy meals all week. It’s also perfect for meal prep on colder weeks. As soon as the weather starts to chill, all I can think about is warm, creamy, filling soups for every meal.

Vegan Hungarian Mushroom Soup

This recipe is inspired by traditional Hungarian Mushroom Soup but vegan. It is creamy and thick and packed with umami flavour. The extra creaminess in this recipe comes from soy milk and blended cashews. Non-vegan versions of this soup often use sour cream, so the combination of cashews and lemon juice really satisfies that flavour and provides a vegan sour creaminess.

The way you blend is up to you, I prefer using an immersion blender in the pot but use what you have, you can carefully pour the ingredients into a high-speed blender and blend until smooth before serving. I like my soup very well blended but you can leave it a little bit chunky if you prefer.

  3. Add thyme and paprika, and stir in broth, and soy sauce. Stir to remove any clumps, then bring the mixture to a boil, and immediately reduce heat to medium and simmer until the soup begins to thicken about 10 mins. Add soy milk and simmer for about 10 mins.

  5. Add blended soup back to the pot and stir to combine.
