This oat milk crepes recipe is a dairy-free version of classic crepes, traditionally made with milk. Oat milk adds a creamy texture and slightly sweet flavour, which is perfect for crepes.

Crepes can be served in various ways, both sweet and savory. If you prefer savory oat milk crepes, use unsweetened oat milk! If you want sweet oat milk crepes, feel free to use any oat milk, including vanilla oat milk!

For sweet crepes, you can fill it with ingredients like fresh fruits, chocolate hazelnut spread, or a dusting of powdered sugar. Sweet sauces like maple syrup or berry jam can also be drizzled over the top too! For savory crepes, fillings such as sautéed greens and mushrooms or dairy-free cheese can be added, creating a satisfying breakfast or brunch dish.

Oat Milk Crepes

INGREDIENTS FOR CREPES (OAT MILK):

  • Oat milk
  • Flour
  • Cornstarch
  • Salt
  • Coconut Oil (or canola oil)
  • White Sugar

Ingredients
  • 1 cup unsweetened oat milk, or use vanilla oat milk and omit the sugar if you're making sweet crepes)
  • 2 tbsp coconut oil (or canola oil)
  • 1 cup water
  • 1½ cups flour (unbleached all-purpose)
  • 1 tbsp cornstarch
  • ¼ tsp salt for sweet crepes, ½ tsp for savoury crepes
  • 1 tbsp granulated white sugar (if making sweet crepes)
  • butter, for frying
Instructions
  1. In a blender, blend together oat milk, coconut oil, water, flour, cornstarch, salt and sugar, until smooth. Scrap down sides with spatula so you're blending your oat milk crepes nicely.
  2. Heat a medium, non-stick pan to medium-low heat.
  3. Melt 1 tbsp dairy-free butter (or oil), and swirl around the pan to coat.
  4. Using a measuring cup, measure and pour about ⅓ cup of the batter to the pan, and immediately rotate the pan around so the batter thins out into a thin crepe.
  5. Cook the batter until the top of the crepe looks dry and easy to flip, about 2 mins.
  6. Using a thin spatula, carefully flip the crepe, and cook for another 30 sec-1 min. Remove from the pan and repeat.
  7. Serve with crepe toppings, either sweet or savory. Enjoy your oat milk crepes!

Vegan Protein Pancake Mix

This protein pancake mix makes light and fluffy vegan protein pancakes that are delicious!

All you need to do to make this vegan recipe is add your dry ingredients to a bowl or jar and mix to combine: flour, protein powder, sugar, baking powder, baking soda and salt.

To make pancakes, add plant milk (like soy milk) and mix, then cook like regular pancakes. Store leftovers in a container!

I'm going to show you how to make my vegan protein pancake mix in 1 min! This high-protein vegan pancake mix is just what you need for breakfast!

Ingredients
  • 5 cups all-purpose flour
  • 1¼ cups Vegan protein powder
  • ¼ cup white sugar
  • ¼ cup baking powder
  • 1 tbsp baking soda
  • 1 tsp salt
Instructions
  1. In a large jar add; flour, vegan protein powder, sugar, baking powder, baking soda and salt. Shake to mix up. Alternatively, whisk everything in a large bowl, and transfer to an airtight container or plastic bag.
  2. To make the pancakes: In a medium-size bowl add 1 cup soy milk (I find soy works the best for these) and 1 tbsp apple cider vinegar. Let it sit for a minute or two. Then add 1 tsp vanilla extract(optional) and 1 cup of the pancake mix. Cook pancakes in a greased skillet for 2-3 minutes or until you see the bubbles in the centre stop "opening and closing". Flip and cook for another 1-2 minutes.

I’ve been making so many vegan breakfast toast recipes lately and am so excited to share the best way to make vegan beans on toast – the deluxe version which is incredibly tasty.

As you may know, Beans on Toast is not vegan normally, since the dish often contains butter, as well as may contain bacon, pork, and Worcestershire sauce.

For this vegan breakfast recipe, you need a can of baked beans, vegan butter, an onion, brown sugar (or maple syrup), mustard, nutritional yeast, vegan cheese of choice and hashbrowns!

I'm going to show you how to make vegan beans on toast in 6 mins. Beans on toast is a popular British dish consisting of baked beans served on buttered toast! This is a tasty version made vegan!

Ingredients
  • 1 can baked beans
  • vegan butter or margarine as needed
  • ¼ small cooking onion, or 1 shallot, chopped
  • 1 tbsp packed brown sugar or maple syrup
  • 1 tsp yellow mustard
  • 2 tbsp nutritional yeast
  • vegan cheese of choice (link our feta)
  • 4 Hashbrown patties
  • 2 bread slices
Instructions
  1. Cook hashbrown patties according to package instructions.
  2. Meanwhile, Heat 1 tsp olive oil or plant-based butter in a small saucepan over medium-high heat.
  3. Add onion or shallots with a pinch of salt, and cook until translucent, about 3 minutes.
  4. Add canned baked beans, sugar or maple syrup, yellow mustard, and nutritional yeast, and stir to combine. Cook until heated through.
  5. Taste & season with salt and pepper.
  6. Make toast and butter it.
  7. On each piece of toast, place a hashbrown patty, and then top with a couple of spoonfuls of baked beans and some vegan cheese of choice.

  1. In a medium-sized bowl, combine lemon juice, olive oil, beans and basil. Season to taste with salt and pepper.
  2. In a second bowl, combine cucumbers and let sit until slightly softened, 8-10 mins.
  3. Heat a grill, or grill pan over medium-high, indirect heat, and lightly oil.
  4. One at a time, grill each naan or flatbread over direct heat, as needed, until it is stiff and lightly charred, about 3 mins.

  1. Line a 10 in x 15 in baking sheet with parchment paper, leaving some overhang.
  2. In a medium-size bowl whisk together yogurt and agave or maple syrup.
  3. In an even layer, spread the yogurt onto the baking sheet from edge to edge.
  4. Evenly top the yogurt with strawberries, blueberries and raspberries, then granola, coconut or nuts.
  5. Freeze for at least 4 hours, but overnight is best.

These cereal bites are super easy to make and totally customizable to your taste palette. This recipe uses only 7 ingredients! The base of this recipe is made with cereal and glued together with coconut oil and nut butter.

You can pack this for lunch for your kids or savor it all for yourself throughout the week.

Alternative ways to make this recipe:  

Additionally, you can add mix-ins like flax seeds, hemp hearts, protein powder or any other cereal flavors you like. You can also substitute the wet ingredients with any kind of nut butter and your favorite yogurt flavor. Mine is strawberries.

When you are in a rush for a quick and nutritious breakfast, you have to try these grab-and-go vegan cereal bites. These cereal bites are super easy to make and totally customizable to your taste palette.

  1. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. In a small saucepan over medium heat, melt coconut oil. Reduce heat to medium-low, and stir in sweetener of choice, and nut butter of choice, until combined.
  3. Remove from heat, and stir in oats, cereal of choice, and shredded coconut, until well combined.
Option 1: Using an ice cream scoop, scoop out and form firm little balls or "bites" and place them on the lined baking sheet. Then, dip the top of each bite into yogurt (coating about ½) and place it back onto the baking sheet. When they've all been dipped, place them into the freezer overnight or for at least 60 mins. Store in a container in the freezer for up to 1 month. To enjoy, let them sit out at room temperature for about 10 minutes before eating.
Option 2: Transfer the mixture to an 8×8-inch baking dish and spread out evenly. Cover with a piece of parchment or plastic wrap and press firmly. This step ensures they do not crumble, so really press. You can use a glass to do this if you need some help. When they are cooled, top with yogurt and place them into the freezer overnight or for at least 60 mins. So don’t you dare throw those away! We are making banana bread. Vegan.

Banana bread is such a versatile loaf of bread, you can eat it anytime as a simple snack or dress it up with some peanut butter and jelly for a sweet breakfast. How about, a slice of banana bread lightly toasted with some vegan butter, maple syrup and vegan eggs? French Banana Toast.

Alternative Ways to make this recipe:

Vegan Banana Bread

Now, how do we make banana bread? It is super simple. This crispy on the outside, soft on the inside recipe takes less than 15 minutes to make. First, you want to prepare the dry ingredients and the wet ingredients separately.  Second, pour the dry ingredients into the wet ingredients, mix until smooth, then place it on a pan to bake for about an hour. Finally, let the bread cool for about 10mins and you are ready to enjoy some hot and fresh homemade vegan banana bread straight out of the oven.

How many servings does this make?

This recipe makes apprx. 8-10 slices depending on how you cut your slices. You can alternatively pour the batter into a muffin tin, bake for 25 minutes for 12 banana muffins.

How long will this last?

Banana bread will last 4 days tightly wrapped and sealed on your countertop at room temperature.

  1. Preheat oven to 350F, place the oven rack into the center and line a 9x5x3 bread pan with parchment paper.
  2. In a medium-sized bowl whisk together flour, baking soda, and salt.
  3. In a second bowl, cream together mashed bananas, sugar, yogurt, margarine, or oil and vanilla with a wooden spoon, hand mixer, or stand mixer.
  4. Fold the banana mixture into the flour mixture until the batter just comes together. Do not overmix.
  5. Transfer the batter to the lined loaf pan, and smooth out the top.
  6. Bake for 60-65 minutes, or until a tester (like a toothpick) inserted in the center comes out clean.
  7. Place the loaf (still in the pan)onto a wire rack, and allow it to cool completely.
  8. Serve on its own or with vegan butter

Breakfast can be more creative with this recipe because you are collaborating what you would typically eat for breakfast into a whole new recipe. This simple and easy-to-make recipe is both satisfying and filling. To create this recipe, you just need freshly toasted slices of bread, topped with a pre-made creamy yogurt sauce, seasoned fruits and chopped nuts. I guarantee you that this dish will make you want to wake up earlier just to start your morning right. If you want to make something really special for someone, this is the perfect breakfast-in-bed meal.

Are there other ways to make it? 

You can change up the fruit combinations, toppings and optional sweeteners to anything you have in your kitchen. This recipe is also great with basically any fresh bread, but challah is my favourite.

Fruit Bruschetta with Creamy Yogurt Spread

One of my favourite things about living in Canada is tasting the fresh produce of our ever-changing seasons. This recipe is such a fun way to integrate different fruits, from berries to stone fruits, the options are endless. And if you don’t have access to fresh produce, you can also defrost frozen fruit prior to cooking, wild blueberries are a great addition!

This recipe is a simple start to your morning routine. Just a couple of simple ingredients that can satisfy your entire week. All you need to do is mix up the yogurt spread, toast your bread, then spread the sauce over your toast, topped with fruit, nuts and optional other sweet options you can enjoy!

 

How many servings does this make?

This recipe makes 2 servings, but it’s easy to double or even triple the recipe if you’re serving more guests.

Can I make it ahead of time?

You can absolutely make the coconut spread at the beginning of the week or the night before and store in an air-tight container in the fridge to use all week! You can also pre-chop any fruits that won’t go brown.

  1. Preheat your oven to 350F, and line a baking sheet with a silicone baking mat or parchment.
  2. Open the refrigerated can of coconut milk and remove only the thick hard coconut cream and place it into a medium-size bowl. Save the liquid for smoothies.
  3. Add the plant-based Yogurt, and with a whisk, hand mixer, or in a stand mixer, mix the two together until combined. If you want the whipped yogurt a bit sweeter, add in additional sweetener of choice now 1-2 tbsp at a time. Place in the fridge.
  4. In another medium bowl, stir together your chosen fruit. Set aside.
  5. Arrange the bread slices in a single layer and toast in the oven for 4-6 minutes, or until the top is golden and crispy (Timing will all depend on your oven). Flip the bread slices, and toast for another 3-4 minutes.
  6. When toast has cooled, evenly spread the yogurt mixture between the bread slices, and scoop some fruit onto the yogurt spread. Garnish with optional garnishes of your choice.

Falafel waffles are the perfect simple breakfast meal you have been looking for. This is a very flavourful, yet savory treat that is a crowd-pleaser for parties or for simple meal prep ideas. Classic falafel is typically made into bite-sizable balls, deep-fried and served in a pita wrap with veggies, but for this simple and fun twist, we’re going to cook the falafel in a waffle maker topped with homemade garlic yogurt sauce. My favorite part of this recipe is that it’s completely vegan!

Falafel Waffle Recipe (Vegan)

Falafel can be an intimidating recipe to novice chefs.  The more steps there are, the less motivated you might be to cooking. That is why in this recipe, we will be using a boxed falafel mix with a waffle iron to make it even easier. No food processors or deep fryers are used for this recipe! This recipe is highly addicting, super easy to make, and suitable for every occasion.

Are there other ways to make it? 

Absolutely! You can add any fresh herbs and veggies you’d like! Pickled or seasoned veggies with homemade sauces and roasted chickpeas would be all great options here! If you are feeling adventurous, you can substitute the falafel as a patty on a sandwich or a burger.

Make the Yogurt sauce:
  1. In a small bowl combine 1 cup Silk Plant-Based Oat Yogurt, 2 grated garlic cloves, 1 tsp lemon juice, and salt to taste, place in the fridge until ready to serve.
Make the Salad:
  1. In a medium-size bowl combine tomatoes; cucumber, drained red onion, parsley, 2 tbsp olive oil and vinegar. Place in the fridge until ready to serve.
Make the Falafel Waffles:
  1. In a large bowl, stir together; falafel mix, then add ¼ cup olive oil, water according to package instructions, and Silk Plant-Based oat yogurt. Add the flour and baking powder, and mix until well combined.
  2. Preheat waffle maker.
  3. Spray waffle maker with nonstick cooking spray and add ½ cup falafel mix. Close the waffle maker and cook until waffles are crisp and golden brown, about 3-5 minutes. Repeat with remaining falafel mix.
  4. Serve waffles with a dollop of hummus (optional), some Salad (optional) and drizzle with garlic yogurt sauce.

I’ve been making so many vegan french toast recipes lately and so excited to share vegan pumpkin french toast recipe. Picture this: you wake up on a cool Autumn morning with some pumpkin spice french toast, covered with non-dairy whipped cream and maple syrup. Sounds fabulous, right?

All you need to do to make this vegan french toast recipe is add all of the batter ingredients to a blender and blend until smooth, then add to a shallow bowl and dip sliced bread into it. Next, cook dipped bread in a frying pan until golden brown and serve with preferred toppings.

  1. To a high-speed blender, soy milk, pumpkin puree, tofu, coconut sugar, nutritional yeast, Kala namak, vanilla, and pumpkin pie spice and blend until smooth and creamy. Transfer to a large but shallow bowl.
  2. Heat a large frying pan over med-high heat (non-stick preferred) and melt 1 tbsp butter.
  3. In batches, dip a slice of bread into the pumpkin/tofu mixture and coat both sides generously. Place it onto the pan and repeat to fill the pan.
  4. Cook both sides of the bread for 3 to 4 mins each, or until golden brown.
  5. Remove each slice from pan and serve with powdered sugar, maple syrup, fresh fruits, nuts or whipped cream.

I’m going to show you how to make sweet and savoury french toast sausage roll-ups recipe for breakfast in 10 mins. Using simple ingredients, you can make these french toast roll-ups that taste amazing and are fast and fun to make.

These french toast roll-ups are perfect for any age. From kids to teens to adults, these are sweet and savoury and dippable. I like to dip mine in maple syrup but you can use anything you like and top with a dusting of icing sugar.

I made these french toast sausage roll-ups using defrosted vegan sausages like Beyond Meat and just cut them in half to make two smaller sausages. 

All you need to do to make these french toast roll-ups recipe is add all batter ingredients to a blender and blend until smooth, grab some bread slices and flatten the bread (I like crusts cut off), then roll up the sausages inside the bread, dip in batter and then pan-fry until golden on all sides.

I'm going to show you how to make sweet and savoury french toast sausage roll-ups for breakfast in 10 mins. These sausage french toast rolls are amazing!

  1. To a high-speed blender, add tofu, soy milk, nutritional yeast, Kala namak, and vanilla and blend until smooth and creamy. Transfer to a shallow bowl or casserole dish.
  2. With a rolling pin, flatten each slice of bread and cut off the crusts.
  3. Heat 1-2 tbsp vegan butter in a skillet over medium-low heat.
  4. One at a time, place a sausage at the edge of a piece of bread and roll up tightly.
  5. Dip the rolled-up sausages into the tofu mixture, rolling to coat thoroughly, and pan-fry in the skillet until all sides are golden brown, 3 to 4 mins.
  6. Serve with cinnamon sugar, maple syrup, fresh fruits, hot sauce, or hot honey.

You can really get creative with these vegan breakfast pastries. The recipe I give here uses my breakfast toppings but you can change it up however you’d like with different vegan cheese flavors, veggies, and plant-based meats. 

All you need to do to make this vegan recipe is roll out the puff pastry and cut into rectangles, then par-bake to get them to rise. Then mix your choice of vegan egg and cheese and pour into the centre of the pastry and top with veggie bacon and tomato. Bake until golden and cheesy.

I'm going to show you how to make a vegan breakfast pastry with vegan puff pastry, vegan cheese, veggie bacon or ham slices, plant-based milk, maple syrup and tomato (if you want). Using simple vegan alternatives, you can make an easy vegan breakfast pastry.

  1. Preheat the oven to 390F.
  2. In a small pan cook up vegan bacon or ham in 1 tbsp of oil, until crispy. Set aside
  3. In a small bowl, whisk together maple syrup and soy milk. Set aside.
  4. Unroll the puff pastry and cut it into four equal-size rectangles and place it on a lined baking sheet. Using a sharp knife score a 1cm from the edge border on each piece of pastry. Make sure you don't go all the way through. Peirce the center all over with a fork.
  5. Brush each with a small amount of the soy milk mixture and bake in the oven for 8-10 minutes or until pastry just beginning to golden.
  6. Meanwhile, mix together cheese and plant-based eggs. Set aside.
  7. Remove from the oven and gently push down the center of the tart.
  8. Carefully and evenly pour egg mixture into the center of each tart.
  9. Sprinkle with cooked bacon or ham and place a slice of tomato on top. Bake for another 8-10 minutes or until the eggs are set and pastry is golden.
  10. Season tomato with salt and pepper and garnish with parsley. Serve warm or cold.
