These delicious vegan big mac tacos, aka smash burger tacos can be made in 15 mins at home including big mac sauce! Anyone in your household will find these tacos super tasty drizzled with my vegan big mac sauce!

You may have seen Big Mac tacos on Tiktok going viral and everyone making them, but there was no vegan version, so I decided to create a vegan recipe for everyone to enjoy and try! And WOW, this trendy food is worth trying – it’s incredibly delicious and worth the hype.

Vegan Big Mac Tacos Recipe

How To Make Big Mac Tacos (Vegan)

For this recipe, you’ll want to make my easy vegan big mac sauce (literally mixing vegan mayo, ketchup, mustard, sweet pickle relish, garlic powder & paprika), choose your preferred veggie ground beef, small tortillas (think hamburger bun-sized), plant-based cheddar or Mexican-style cheese, with shredded lettuce, sliced dill pickles and onion for that Big Mac taste.

Now, I definitely get comments that Big Mac sauce does not traditionally use ketchup (which I know they use vinegar and sugar instead), but those two ingredients are in ketchup and I think it’s better with ketchup (trust me I’ve perfected my vegan big mac sauce which is why it’s the most popular recipe). The ketchup makes it faster and easier to make since vinegar and sugar are already in it.

Big Mac Taco

INGREDIENTS FOR BIG MAC TACOS:

  • Vegan Big Mac Sauce
    • Relish (sweet pickle)
    • Mustard
    • Ketchup
    • Garlic Powder
    • Paprika
    • Mayo (plant-based)
  • Small Tortillas (use gluten-free option if GF)
  • Veggie ground beef or veggie burgers
  • Onion
  • Iceberg Lettuce
  • Pickle Slices
  • Vegan Cheddar Cheese (or Mexican-style plant-based cheese)

Ingredients
  • 0.5 lb veggie ground beef, or veggie burgers
  • 6-8 small flour tortillas
  • 3 tbsp plant-based mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1½ tsp sweet pickle relish
  • ¼ tsp garlic powder
  • ¼ tsp paprika
  • ¼ cup plant-based cheddar-style or Mexican-style plant-based cheese, or 6-8 slices
  • 2 lettuce leaves, shredded
  • 2 tbsp finely chopped dill pickles
  • 2 tbsp finely chopped white onion
Instructions
  1. Make Big Mac Sauce: In a small bowl whisk together vegan-friendly mayo, ketchup, yellow mustard, sweet pickle relish, garlic powder, and paprika. Place into the fridge until ready to use.
  2. Preheat a large pan or skillet over high heat.
  3. In batches of 3-4: press a thin layer of veggie ground beef onto the tortillas to make sure the smash burgers are the right size.
  4. Lay down the smash burgers, and cook for 1 min.
  5. Lower heat to medium, flip the burgers, and sprinkle with cheese of choice,
  6. Add a couple of drops of water & cover to steam & melt the cheese.
  7. When the cheese has melted, top with tortillas, and transfer to a cutting board.
  8. Spray the pan with a bit of oil and add the burgers back, tortilla side down, until they're lightly browned.
  9. Serve spread with Big Mac sauce, and sprinkled with lettuce, onions and pickles.
  10. If making a larger batch of tacos, preheat your oven to 250F, and transfer them into the oven after step 8 to keep them warm until you're ready to dress them with sauce, lettuce, onions and pickles.

Today I’m showing you how to make an easy vegan calamari recipe to impress vegan and non-vegan guests, or just cook them up for yourself for a fabulous dinner for one.

This bite-sized appetizer has a delicate texture similar to squid and when seasoned and fried, takes on a full calamari flavour!

  • King Oyster Mushrooms
  • Olive Oil
  • Kombu (optional)
  • Salt
  • Flour
  • Cornstarch
  • Old Bay Seasoning
  • Soy Milk
  • Vinegar

These vegan calamari are made of king oyster mushrooms with seasoning that makes them taste like fried calamari!

Ingredients
  • 10 king oyster mushrooms, sliced into ¼-inch slices
  • 1 tbsp olive oil
  • 1 piece of kombu, optional
  • ¼ tsp salt
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • ½ tsp old bay seasoning
  • ½ cup unsweetened soy milk
  • 1½ tsp vinegar
  • vegetable oil, for frying
  • 2 lemon wedges, as garnish
  • dip sauce of choice
Instructions
  1. Start by boiling water in a kettle or in a small saucepan. Then, use a ½-inch round metal straw, cookie cutter or a cake piping tip to make holes in the center of each mushroom, to create calamari-looking rings.
  2. Place the calamari mushroom rings to a small saucepan and cover the mushrooms in water and bring the water to a boil.
  3. Once boiling add 1 tbsp olive oil, ¼ tsp salt, and kombu.
  4. Add mushrooms and boil for 15 minutes, or until they are dark in colour and most of the water has dissolved. Remove from heat and let them cool.
  5. While calamari is boiling, combine the flour, cornstarch, and old bay seasoning together in a bowl. Pour half of the mixture into a second bowl.
  6. In a third bowl whisk together soy milk together with the vinegar and set aside for 5 minutes to create soy buttermilk.
  7. If using a deep fryer: heat frying oil to 350F.
  8. If using a deep pan: pour enough oil to measure 3 inches inside the pan and heat the oil over medium-high heat to 350F.
  9. When the oil is hot, dredge the mushrooms in the flour mixture and shake off any excess as you place them into the bowl with the soy buttermilk.
  10. Transfer them then to the second bowl of seasoned flour coating them, completely and place on a wire cooling rack.
  11. In batches, fry the calamari for 2-3 minutes or until golden brown on both sides, allowing the oil to return to 325F between batches.
  12. Transfer fried calamari to a wire cooking inside a baking sheet, to allow excess oil to drip.
  13. Serve with caper aioli, garlic aioli, or tartar sauce.

I’m going to show you how to make an easy vegan Japanese Egg Salad to use in a sandwich, also called Tamago Sando! For this recipe, I’ll show you how to make vegan egg yolks to use for a Japanese-style egg salad!

All you need is ackee, olive oil, nutritional yeast, black salt (for eggy flavour), soy milk, vegan butter, tofu and vegan kewpie mayo (Japanese Mayo). If you don’t have store-bought vegan kewpie mayonnaise, you can easily make it using vegan mayo! I’ll leave my recipe for it below!

How To Make Vegan Japanese Egg Salad

This vegan Japanese egg salad recipe is super egg and creamy, much creamier than regular egg salad. To make a Japanese egg salad sandwich, called Tamago Sando, you’ll need vegan Japanese milk bread. If you can’t find a vegan one in-store, there are recipes online to make vegan milk bread!

To make the vegan egg yolks, you’ll want to boil 1/2 cup of ackee for about 10 mins or until tender. Then blend the ackee in a blender with 2 tbsp olive oil, nutritional yeast and black salt. Puree all these ingredients until well combined. Add 1 tbsp of water at a time until you get the yolk-like texture and consistency that you prefer.

Vegan Japanese Egg Salad Sandwich

Now make your vegan Japanese egg salad! Mix in your vegan egg yolks with vegan kewpie mayo until combined! Cube 1/2 block of soft tofu and 1/2 block of medium tofu and fold into the vegan egg yolk and mayo mixture. and coat the tofu. Please in the fridge to chill. And voila! Vegan Japanese egg salad that you can serve whenever you want! Taste and season the tofu egg salad mixture with black pepper and serve on your vegan Japanese milk bread, sliced with vegan butter over one side of each bread slice. Traditionally, a Japanese egg salad sandwich trims off the discarded crust and the sandwich is cut in half diagonally so you have 2 triangles.

  5. Add ackee yolks as needed, and stir to combine.
  6. Gently fold in the cubed tofu until just coated and place into the fridge to chill.
  7. When ready to serve; taste and season the tofu mixture with black pepper.
  8. Spread butter evenly over one side of each bread slice.
  9. Top 1 slice, butter side up, with the tofu egg salad.
  10. Cover with a second bread slice, butter side down.
  11. Trim off and discard crust and cut sandwich in half diagonally so you have 2 triangles.

  1. In a small bowl whisk together butter, grated garlic, basil, and oregano. Set aside.
  2. Preheat your air fryer to 400F, or oven to 350F.
  3. Flour a clean surface and roll out your dough. Knead to form a smooth ball, and then divide the dough into roughly 30-gram balls.
  4. Flatten each ball, wrap it around a cube of cheese, and roll back into a ball.
  5. Oil the bottom of the air fryer, or air fryer pan with cooking spray or oil, and arrange the dough balls about ¼ inch apart. If using an oven, line a baking sheet with parchment or a silicone baking mat.
  6. Brush the top of each dough ball with some garlic butter.
  7. Bake for 5-7 mins, then brush with more garlic butter and bake for another 5 mins, repeat until your balls are golden.
  8. Meanwhile, heat your marinara in a small pot or pan, then transfer to a small bowl.
  9. Brush the balls with the remaining garlic butter, top with coarse sea salt, and serve on a serving plate with the marinara.

  1. Preheat oven to 350F and grease 2 lipped baking sheets (15x10x1-in).
  2. In a large bowl mix together; veggie ground, crushed cornflakes, mustard, salt if using, and aquafaba.
  3. Shape the mixture into 1-in. balls, and place onto the prepared baking sheet.
  4. In a small small pan over medium-high heat, stir together brown sugar, vinegar and mustard. Continue stirring until the sugar is dissolved, and remove from heat.
  5. Lightly pour some of the glaze over meatballs, bake until browned and cooked through for 15-20 mins, flipping or stirring them halfway through.
  6. To serve: Gently toss the meatballs in the remaining glaze. You can serve them as a meal or with toothpicks as an appetizer.

Chicken Bacon Ranch Tacos

This recipe is definitely going to be a crowd pleaser. The combination of chicken and bacon adds that extra meaty flavor to your tacos. Just because you are vegan, doesn’t mean that you have to miss out on the smokey BBQ flavors you once enjoyed. Just substitute meat with vegan meat you can make at home.

The best tacos are made with the simplest ingredients. This potato taco is super simple to make and takes less than 10mins of your day. Make a little extra, freeze them before you cook and you will still have that restaurant quality tacos you can access anytime.

  1. In a large bowladd; cheese, cumin, nutritional yeast, paprika, garlic and onion powder. Using a ricer or a potato masher, mash potatoes in the bowl and combine with spices and cheese. Taste, and season with salt and pepper.
  2. In a dry skillet or microwave warm the tortillas, and cover with a towel.
  3. One at a time, spread about one heaping tablespoon of potato onto half of a tortilla, fold it closed, and secure with a toothpick.
  4. In batches, brush or spray each side of the tacos lightly with oil or cooking spray and place them into the air fryer.
  5. Fry at 380F for 10-12 mins, or until crispy, flipping once.
  6. Serve 3 tacos each topped with toppings of choice.

Other cooking options

To Bake: Preheat oven to 400F and bake tacos for 10-12 minutes, flipping once, until crispy.

Deep fryer or stove-top frying: do not spray or brush the tacos with oil for this method. Heat oil in a deep fryer or a large pan, over medium-high heat (325F for the deep fryer). In batches, fry tacos for 2-4 minutes, or until crispy, flipping once.

Vegan Birria Tacos

Birria is a Mexican dish from the state of Jalisco. It is one of the most traditional dishes that has been passed down from generations. The meat is marinated and boiled in soup broth filled with spices, to tenderize its texture. Some of these spices include chili pepper-based, garlic, cumin, bay leaves, and thyme. Then, slow-cooked in a pot which gives it that red hue. Finally, add a sprinkle of cheese, and you have a crispy, sweet, savory and spicy flavour explosion.
After looking up a recipe from MyLatina Table, I was inspired to recreate this authentic Birria Taco experience with a vegan alternative! Although it is not going to taste exactly the same, I am excited to share with you the possibilities of creating limitless vegan options to various cuisines worldwide.
I hope you enjoy this exquisite flavor as much as I do.

Alternative ways to make this recipe:

You can serve this dish with rice, freshly made corn tortillas, and add your favorite salsa. You can also replace the oyster mushrooms with firm tofu, or your favorite veggie meat.

Birria Tacos with Consommé

Quesabirria is an authentic Mexican dish cooked with Birria-style (beef folded into a tortilla with melted cheese and served with a side of consommé for dipping). This dish is typically served during holidays and on special occasions. Depending on the region you are living in, every Birria Tacos has its own taste inspired by every family’s secret sauce.

This recipe is made for 1-3 tacos but you can always increase the serving size.

  • 2 lbs king oyster mushrooms, shredded (you can also use young jackfruit in water or brine), shredded

Birria is a popular Mexican dish that originated in the Jalisco state. Traditionally made with lamb meat, we are recreating this recipe with a vegan alternative.

  • 2 lbs king oyster mushrooms, shredded (you can also use young jackfruit in water or brine), shredded
  • 2 tbsp vegan butter
  • 2 tbspolive oil
Consumé

  • corn or flour tortillas
  • 1½ cups vegan white-style cheese (if making quesabirria)
  • ¼ cup cilantro, chopped
  • lime wedges
  • ¼ white onion, finely diced
Instructions
  1. Meat
  2. Heat a large pan over high heat. Add butter and oil and heat until it ripples. Working a couple handfuls at a time, cook the mushrooms until they have browned and there’s no liquid left in the bottom of the pan. Push them to the side and repeat with remaining mushrooms. Remove from the pan and set aside.
  3. Sauce
  4. Heat 1 tbsp oil in a small pan over medium-high, add chilies and fry, moving constantly for 1-2 mins.
  5. Add 1 cup water and 1 bay leaf , and bring everything to a boil. Boil for about 10 mins, or until the chilies are softened. Remove the bay leaf and add everything else to a blender.
  6. In the same pot, heat another 1 tbsp olive oil over medium-high heat. Add onion and tomatoes, and cook until they are slightly browned, about 5 minutes.
  7. Add garlic, peppercorns, dried thyme, marjoram, dried oregano, ground cinnamon, and allspice, and cook for another 5 minutes, or so, stirring frequently. Add small amounts of water to the pot if necessary.
  8. Add the onion/tomato mixture to the blender, along with ginger, cumin, apple cider vinegar, 3 cups water, and bouillon cubes.
  9. Blend until very smooth.
  10. OPTION 1: Transfer the consumé to a medium saucepan and bring to a boil.
  11. Reduce heat to to medium-low, add mushrooms, cover, and simmer for at least 1 hour. Taste and add salt and pepper to taste.
  12. OPTION 2: Transfer the consumé, and shredded mushrooms to an electric pressure cooker (like an instapot). Pressure cook the mixture on high for 25 mins, then allow the pressure to release naturally for 5 mins, before using the quick pressure release to release the rest of the pressure.
  13. Separate the mushrooms from the broth.
  14. Warm-up tortillas on the stove, oven, or microwave, and heat a non-stick pan over medium-high heat.
  15. One at time dip the tortillas into the consume, add some mushrooms to one side of the tortillas, followed by some diced onion, chopped cilantro, and cheese if using. Fold the tortilla in half, grease the pan, and cook for 1 minute or so (covered, if using cheese to help it melt). Repeat with remaining tacos and mushrooms.
  16. Serves with a side of consume for dipping, a wedge of lime, and a cold beer.

Vegan Bacon Wrapped Tater Tots Recipe

Western food is renowned for its classic; Bacon’N Egg for breakfast, potatoes and bacon bits, bacon in quiche. You name it, bacon’s in it. Luckily, I have perfected the Rice Paper Bacon! This is the gateway ingredient for so many experimental recipes that includes bacon. I am so excited to share with you the first-ever invention, Vegan Bacon Wrapped Tater Tots. Using my Viral Rice Paper Bacon recipe, we can make the perfect snacks for any occasion, especially for the upcoming Superbowl!  Serving your favorite Game Day treats, this recipe might bring a little more luck to your team.

This recipe is so easy to make that you can almost squeeze in cooking this entire recipe in between half-time. Or you can prep the recipes in advance and pop them inside the oven or your air fryer to achieve that ultimate crispiness.

Alternative ways to make this recipe:  

You can use store-bought vegan bacon in place of the homemade rice paper bacon, add any vegan cheese, and dip in your favorite sauces.

Instructions
  1. Preheat your oven to 400F and line a baking sheet with parchment or a silicone baking mat.
  2. Place the tater tots and bake for 10 minutes.
  3. Meanwhile, in a small bowl whisk together 2 tsp nutritional yeast, garlic, paprika, liquid smoke, maple syrup, olive oil, tamari, hot sauce, MSG, and water to make a marinade. Transfer to a plate with a lip or curve.
  4. In another small bowl mix together crumbled tofu and 1 tsp nutritional yeast.
  5. Take one sheet of rice paper, lay it on the plate with the marinade, use your fingers to rub it everywhere. Flip and place the rice paper onto a cutting board.
  6. Sprinkle the marinated rice paper with the tofu.
  7. Take the second sheet of rice paper and lay it on the plate with the marinade, use your fingers to rub it everywhere, and then place it on top of the tofu.
  8. Wet your hands with a little bit of water and press down on top of the stack if you find the edges curling up and not sticking well enough. Let it sit until it settles.
  9. When the rice paper settles, and kind of hugs the tofu, take a pizza cutter and cut it into 6 strips. Then cut each strip across into 4 pieces.
  10. Place brown sugar into a small bowl, or ramekin.
  11. Working one at a time, wrap each tater tot with a piece of bacon, and then dip into the sugar. Place seem-side down back onto the baking sheet (or secure with a toothpick).
  12. Bake for 10-15 minutes, or until taters are browned, and bacon is slightly crispy and caramelized, turning halfway with tongs. They will crispy up more as they sit on the plate.
  13. Garnish with some cayenne pepper and parsley, and serve.

Vegan Cobb Salad Recipe

“The best salads are the ones with the least amount of greens” – Candice Hutchings. As ironic as it sounds, I am guilty of enjoying my soups and sandwiches more than my sides of greens. That is why I have created a salad that has a lettuce to toppings ratio of 1:9.

A “cobb salad” is a classic American dish that is typically made with a bed of lettuce, covered up with toppings like cherry tomatoes, chopped bacon, chicken, avocado and other vegetables, served with blue cheese/red wine vinegar dressing. You can taste the blend of creamy and flavourful from all the different textures in this salad. This is a veganized version of it #happyveganuary.

Alternative ways to make this recipe:  

You can add all your favorite toppings! You are definitely not restricted from following the classic version of this. Use what you might already have in the kitchen. Some great options are avocado, chopped cucumber, vegan chicken pieces, etc.

Non-Dairy Creamy Tomato Bisque Recipe

  1. In a medium saucepan over medium heat olive oil and sauté onion ad garlic for 1 minute.
  2. Add celery, a pinch of salt, basil, thyme, and crushed tomatoes and cook for about 5 mins or until onions are translucent.
  3. Add vegetable broth, and maple syrup and bring to a boil. Immediately reduce heat to a simmer. If you're short on time cook for 20 minutes. If you have time, cook for 40 minutes.
  4. Using a stand or immersion blender, blend until smooth.
  5. Stir in cream until combined. Season with pepper and salt to taste.
  6. Serve with a swirl of cream, chopped parsley and grilled cheese sandwiches or grilled cheese croutons.

Many recipes take over 1.5-2 hours to make mozzarella sticks, so I wanted to share with you the quickest and easiest way to make them. My recipe requires very little work and most time is spent freezing them in the freezer.

Vegan Mozzarella Sticks

These vegan mozzarella sticks are perfect to share with friends or family or keep frozen until ready to fry and serve whenever. Mozzarella sticks are a popular American appetizer made from long chunks of cheese that are battered, deep-fried and dipped in a classic marinara sauce. The secret for them keeping their shape is keeping them frozen at particular times in their preparation.

All you need to do to make this vegan recipe is dredge your vegan mozzarella cheese sticks, freeze, then fry and serve whenever you want!

This is how you make easy vegan mozzarella sticks that are crispy & cheesy! Let's make vegan mozzarella sticks just like the classic ones!

  1. Take your frozen half-cut vegan mozzarella cheese sticks out of the freezer.
  2. In a shallow bowl, combine both italian breadcrumbs and panko breadcrumbs.
  3. In a second shallow bowl, place ¼ cup of flour.
  4. In a third bowl, combine 3 tbsp of flour, cornstarch, water, and 1 tbsp oil.
  5. Dip each frozen cheese stick into the bowl of flour. Shake off excess, and place into the wet corn starch mixture. Then, gently place it into the bread crumbs and press the crumbs on each piece of cheese. Make sure it is well coated.
  6. Place covered cheese sticks onto a wire rack placed inside a rimmed baking sheet, or parchment-lined plate and place into the freezer for at least 1 hour.
  7. Heat oil in your pan (at least 2 inches) or deep fryer to 350F.
  8. In small batches, place breaded cheese sticks into the hot oil for about 1 minute or just until the breading is golden brown. Try not to overcook.
  9. Serve with marinara sauce of choice.

Vegan KFC Popcorn Chicken

DAIRY-FREE | NUT-FREE | MEAT-FREE

These vegan KFC copycat popcorn ‘chicken’ are marinated in no-chicken broth, tossed in aquafaba to coat, tossed in cornstarch to make an extra crispy outer layer, tossed in a flour mixture with the famous 11 spice mix, then fried until golden-brown perfection.

On my youtube channel and on this blog, I’m pretty notorious for veganizing your favourite comfort foods and famous junk foods (see: Vegan McDonalds recipe, Wendy’s recipes, Popeyes recipe, Chick-fil-A recipe, etc). For this recipe, we’re making KFC vegan popcorn chicken using soy curls, which I personally don’t think get enough love. Today, we’re appreciating the mighty soy curl by turning them into KFC popcorn chicken.

VEGAN KFC POPCORN CHICKEN INGREDIENTS

TIP: Don’t worry if you don’t have all the seasonings, just use what you have access too! I’ve also done vegan chicken using salt, pepper and paprika as seasonings, which is also good! Obviously these 11 spices will give you a more KFC flavour profile.

VEGAN KFC POPCORN CHICKEN INSTRUCTIONS

  1. In a large bowl combine hot water and better than bouillon no-chicken until dissolved. Add dried soy curls and toss to coat in broth. Set aside to soak for a minimum of 30 mins. I like to do this overnight to really get the flavour in there.
  2. While the soy curls are marinating, mix the flour ingredients for dredging.
  3. To a large bowl, flour, cornstarch, baking soda, baking powder, thyme, basil, oregano, celery salt, black pepper, mustard powder, paprika, garlic powder, ginger, white pepper and MSG.
  4. Meanwhile, in another bowl add; soy sauce, pepper, and aquafaba, and toss to coat. Add 1 tbsp cornstarch and toss to coat again. Set aside.
  5. When the soy curls are marinated; drain in a colander over a bowl to catch the liquid to use in soups or gravy. Using your hands, squeeze out as much liquid as you can. Cut up the soy curls into popcorn-sized bites and place them into a large bowl.
  6. Give the soy curls a quick toss, and then toss into the flour mixture. Press into flour to coat well, dust off any excess flour, and place on a wire cooling rack.
  7. Meanwhile, heat the oil to 350F. Cook a few pieces of popcorn soy curls in hot oil until golden brown, about 3-4 mins, turning a few times. Do not overcrowd the oil or else they will not cook properly.
  8. Remove the soy curls from the fryer and place on a wire cooling rack to allow excess oil to drip off.
  9. Serve with your favourite dips!
