My sweet bride, Victoria, still misses great dairy cheeses after a decade of eating plant-based. I grew up believing the only cheese in the world was Velveeta – ergo – I don’t really miss it. As for the meat lab analogs, there are plenty of excellent plant-based alternatives and I have no desire to try the lab meats. If the lab dairy cheeses are really great and free of the unhealthy elements of dairy, I’m sure we’d try them. But, the variety and quality of plant-based cheeses is evolving rapidly. So… not thrilled about the lab stuff, but willing to be open-minded about it.
