Ingredients

  • 6 oz dark chocolate roughly chopped
  • 1/2 cup rolled oats
  • 1 cup unbleached all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 cup unsalted vegan butter room temp
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 3 tbsp aquafaba liquid inside can of chickpeas
  • Coarse sea salt as needed (vanilla salt is also amazing for this)

Instructions

  • Preheat the oven to 350F, and grease a baking sheet.
  • In a small mixing bowl, combine the flour, baking powder, kosher salt, rolled oats, and cinnamon.
  • In a large mixing bowl, combine the vegan butter, brown sugar, and granulated sugar. Using an electric hand mixer, beat together the butter and sugars until light and fluffy, 2 to 3 minutes. Beat in the vanilla and aquafaba.
  • Using a rubber spatula, gradually add the flour mixture into the butter-sugar mixture. Mix until just combined. Fold in the chocolate.
  • Spoon tablespoon-size balls of dough onto the baking sheet, leaving about 2 inches between the dough balls. Bake the cookies for 12 to 13 minutes or until just beginning to color.
  • Remove the cookies from the oven and sprinkle each one with a few grains of course sea salt … it’s really important to do this while the cookies are hot so the salt sticks. Let the cookies cool for a couple minutes, then transfer to a cooling rack. Repeat with the remaining dough.

Ingredients

  • 1 1/2 cup vegan butter preferably salted vegan butter or dairy-free butter, room temp
  • 1 1/4 cup brown sugar packed
  • 1/2 cup granulated sugar I used organic cane sugar
  • 6 tbsp aquafaba liquid from can of chickpeas
  • 1 tbsp vanilla extract
  • 3 1/2 cups flour unbleached all-purpose flour
  • 1 tbsp corn starch
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 2 cups chocolate chips dark/semi-sweet

Instructions

  • In a medium bowl whisk together; flour, corn starch, baking powder, baking soda, and salt. Set aside.
  • In a stand mixer, or a hand mixer with a bowl, cream together the vegan-friendly butter until fluffy, about 1 minute.
  • Add brown and granulated sugars and cream together until smooth and fluffy, about 3-5 minutes, scraping down the sides of the bowl as needed.
  • Mix in 3 tbsp aquafaba and mix for 1 minute on medium speed. Repeat with remaining 3 tbsp of aquafaba, and vanilla.
  • On a slow speed, add the flour mixture to the butter mixture, 1 cup at a time. Mix just until combined and do not over mix.
  • Fold in the chocolate chips on a slow speed.
  • Using a 4.2 ounce scoop, or a 1/3 cup measuring cup, scoop out the cookie dough and place onto the prepared baking sheet 2-3 inches apart.
  • Using your fingers, cut the dough balls in half (use a pinching motion) and then place the part you removed on top of the bottom of the half. Place the sheets in the freezer for 30 mins.
  • Preheat your oven to 350F and line a baking sheet with parchment or a silicone baking mat.
  • Bake cookies for 10 mins, the cookies will be just barely golden at the edges.
  • Leave them on the baking sheet to cool for 10-15 minutes. Then transfer to a wire rack.

This vegan German streusel cake uses easy and affordable store-bought ingredients like flour, sugar, baking soda, cinnamon and other simple ingredients you have at home.

Traditionally, this cake is made with butter, milk and sometimes eggs but this vegan version of the classic cake features a tender and moist base made with vegan ingredients like vegan butter and non-dairy milk. The cake is also generously topped with a crumbly vegan streusel, made from a mixture of flour, sugar, cinnamon, salt and vegan butter!

  • Streusel:
  • ⅓ cup brown sugar packed
  • ¾ cup unbleached all-purpose flour
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup cold unsalted vegan-friendly butter diced into small cubes
  • Cake:
  • 2¼ cups unbleached all purpose flour
  • 2 tsp baking powder
  • 2 tsp cornstarch
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 ¼ cup granulated white sugar
  • ¾ cups unsalted vegan butter room temp
  • 1 cup unsweetened soy milk, room temperature
  • 1 tbsp apple cider vinegar
  • 2 tsp vanilla extract
  • ¾ cup coconut milk, room temperature
  • Drizzle
  • ¾ cup Powdered sugar
  • 2 tsp Soy milk
Instructions
  1. Preheat the oven to 350F and grease and lightly flour a 9x13 inch pan. Set aside.
  2. In a large bowl, add the ⅓ cup brown sugar, ¾ cup flour, 2 tsp cinnamon, ½ tsp salt, and ½ cup cold vegan-friendly butter cubes, cutter, mash and mix everything together until it resembles a sand-like texture, with some chunks. Set aside.
  3. In a medium-large bowl, whisk together 2¼ cups flour, baking powder, cornstarch, baking soda, and 1 tsp salt. Set aside.
  4. In a stand mixer, or a bowl with hand mixer, cream together ¾ cups vegan butter and 1¼ cups sugar for 4 mins or until fluffy.
  5. Meanwhile in a measuring cup or small bowl, whisk together soy milk and apple cider vinegar and set aside to create buttermilk.
  6. While mixing, one at a time, add vanilla, soy buttermilk and coconut milk to the butter/sugar mixture, scraping down the edges between each. Mix until just combined.
  7. With the mixer on low, slowly add the flour mixture to the butter mixture until combined, stopping and scraping down the sides as needed.
  8. Add half of the cake batter to the prepared pan, and spread it put evenly. (it will be kind of thick).
  9. Sprinkle ½ of the streusel mixture on top, but keep it away from the edges.
  10. Top with remaining cake batter, and spread out again (you may need to use your wet fingers to make it easier to spread and prevent sticking, then top with remaining streusel.
  11. Bake for 30-35 mins, or until a toothpick inserted into the center and comes out clean (It may take as long as 45 depending on your oven).
  12. Meanwhile, whisk together ¾ cup powdered sugar and 2 tsp soy milk in a small bowl or in a measuring cup to make it easier to pour. Add more soy milk if the mixture is too thick. Set aside.
  13. Transfer the cake to a wire cooling rack to cool completely, then drizzle with prepared glaze.
  14. Slice into squares and serve with your favourite coffee or tea!
Notes
Tip: Easily half the recipe for a smaller cake if not feeding a crowd.

How To Make Vegan Pop Tarts

This vegan pop tart recipe is super easy to make & only takes 25 mins to make!

For the pie crust, I recommend buying store-bought pie crust dough (most are vegan-friendly just look at the ingredients – look for ones made with vegetable shortening), rolling out the pastry and cutting out 3×5 in squares (about the size of an index card) to make pop tart shapes! Bunch and knead together the excess/remaining piece of crust, roll out and repeat until you’ve used it all. You can also use frozen pie crust shells and thaw them out to mould them into pop-tart shapes!

For your pop tart’s vegan mixture, choose a jam that you love and want into a pop tart like strawberry jam to make vegan strawberry pop tarts. For the vegan pop tart icing, you’ll whisk together powdered sugar, soy milk, jam and vanilla once your pop tarts are done baking.

Tips:

  • Many store-bought frozen pie pastry shells or dough are “accidentally” vegan! Just check the ingredients list to avoid eggs, milk and butter. Find ones made with vegetable shortening, chances are it is accidentally vegan.

  • 1 vegan-friendly pie crust dough (or 2 frozen pie crust shells), thawed
  • 2 tbsp+ 2-3 tbsp unsweetened soy milk
  • 1 tsp maple syrup
  • ½ cup + 2 tbsp strawberry jelly or jam, as needed
  • 1 cup powdered sugar
  • ½ tsp vanilla
  • unbleached flour, as needed
Instructions
  1. Preheat oven to 375F and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a small cup whisk together soy milk and maple syrup. Set aside.
  3. Unroll or flatten the pie crust onto a sheet of parchment paper and cut out 3x5 in squares(about the size of an index card). Bunch and knead together the excess/remaining piece of crust, roll out and repeat until you’ve used it all.
  4. On half of the cutout crusts spoon roughly 1½-2 tbsp of jam into the center of the rectangles, leaving lots of space from the edges.
  5. Lightly brush the edges with the soy milk mixture, place a second rectangle on top of each one, gently seal the edges together with your fingers, and crimp with a fork.
  6. Gently cut/slice a 2-3 slits on the top of each poptart to create a steam release, and brush with a light layer of the soy milk mixture. Repeat.
  7. Bake for about 10-12 minutes or until golden brown, and allow to cool on a wire cooling rack. Depending on your oven this can go quickly, so keep an eye on them.
  8. Meanwhile, whisk together powdered sugar, 2 tbsp soy milk, 2 tbsp jam and ½ tsp vanilla.
  9. When the poptarts are cooled completely, spread a light layer of icing over each pop tart, and top with any toppings you desire.

Are pop tarts vegan?

Pop tarts are not vegan. Many pop tarts have dairy, egg or even gelatin (in the icing) making most Pop Tarts unsuitable for vegans and vegetarians.

These vegan brownies are gooey, moist and SO GOOD! You can’t taste the beans at all and the coffee brings out the flavour of the chocolate brownie.

This vegan brownies recipe is super easy to make using 3 ingredients & only takes about 25 mins to bake!

All you need is black beans, brewed coffee and a box of brownie mix (most are accidentally vegan!) to make the most delicious vegan brownies the easy way!

If you have chocolate chips or peanut butter chocolate chips, I highly recommend adding them, but it’s totally optional!

  • Black Beans

Ingredients
  • ¾ cup brewed coffee
  • 1-15 oz can of black beans, drained & rinsed (keep the aquafaba for baking!)
  • 1 package brownie mix
  • 1 cup chocolate chips, divided (optional)
Instructions
  1. To begin making your 3-ingredient vegan brownies, brew a cup of coffee.
  2. Preheat oven according to package instructions (Usually 350F) and lightly grease a 9x13-in baking dish.
  3. In a high-speed blender, blend 1 can of drained black beans and ¾ cup of brewed coffee until smooth.
  4. Open a boxed brownie mix and pour into a large mixing bowl.
  5. Pour the coffee/bean mixture into the bowl with the brownie mix and stir until you get a smooth batter. Optional: fold in ½ cup of chocolate chips.
  6. Pour vegan brownie batter into the prepared baking dish and sprinkle with ½ cup chocolate chips, optional.
  7. Bake brownies according to package directions (about 25 mins), until a toothpick inserted comes out clean.
  8. Cool on a wire cooling rack, cut into squares and serve.

How To Make Vegan Butter Tarts

This vegan butter tarts recipe is super easy to make & only takes 15 mins to bake!

For the pie crust, I recommend buying store-bought pie crust pastry (most are vegan-friendly just look at the ingredients), rolling out the pastry and cutting out 4-inch circles that you place in a well-greased cupcake / muffin baking tin! You can also use mini pie shells and place them in the well-greased baking tin too!

For your vegan butter tart mixture, you’ll want to combine soy milk and cornstarch or flax meal (eggless butter tart substitute) in a bowl and melt vegan butter in a small saucepan while stirring brown sugar, salt, syrup, vanilla and the soy milk / cornstarch mixture. Then add pecans, raisins or whatever you want to each pastry shell in the pan and pour your filling until halfway! Then bake for 12-15 mins! It’s that easy.

  • 2 pie shells or 8 mini pie shells (raw | vegan-friendly)
  • 3 tbsp unsweetened soy milk
  • 2 tbsp cornstarch or flax meal
  • ¼ cup vegan butter, softened
  • ½ cup brown sugar, packed
  • ¼ tsp salt
  • ½ cup corn syrup
  • 1 tsp vanilla
  • ½ cup pecans or walnuts, chopped (or raisins)
Instructions
  1. If using pie crust pastry, roll out the pastry and cut out 4-inch circles using a pastry ring or glass.
  2. Place the cutout pastry into a very well-greased cupcake/muffin tin, and place it in the fridge. If using mini tarts, grease the cupcake/muffin tin, and push the mini tarts into each muffin spot/area/hole. Place in the fridge.
  3. Preheat oven to 375F and move your oven rack to the bottom of the oven.
  4. In a small bowl, combine the soy milk and cornstarch or flax meal and set aside.
  5. In a small saucepan over low heat, melt vegan butter. Stir in brown sugar, salt, corn syrup, cornstarch or flax slurry, and vanilla.
  6. Divide pecans or walnuts between the pastry shells, then pour with the filling until each one is half-way full.
  7. Bake for 12-15 minutes or until the filling is bubbling and the crust is lightly golden around the edges.
  8. Allow the tarts to cool in the pan for about 10 mins. Then, transfer to a wire cooling rack until completely cool.

  1. Preheat oven to 375F, and grease or line a baking sheet with parchment or a silicone baking mat.
  2. Roll out the puff pastry into a long rectangle, about 12 in x 8 in, and brush the entire surface with melted (but no longer hot) butter.
  3. Slice the pastry along the short edge into 8 long strips.

  1. In a mixing bowl, whisk together; flour, baking soda, and salt. Set aside.
  2. Using a stand mixer or an electric hand mixer whip butter on medium speed until it's light and fluffy, at least 1 min.

  4. Add both sugars, aquafaba, vanilla, and chai tea leaves (without the bag), and combine on low.
  5. Add the dry mixture and mix on low until fully combined.
  6. Cover and chill in the fridge for 1 hour, or up to 24 hours before baking.
  7. Preheat the oven to 350F & line a baking sheet with parchment or a silicone baking mat.
  8. Roll the dough into 2 tbsp balls and place them onto the prepare baking sheet. Flatten slightly with your hands.
  9. Bake for 8-12 mins, or before the edges start to brown.
  10. Transfer cookies to a wire cooking rack to cool.
  11. Meanwhile, in a small mixing bowl combine; 1 cup powdered sugar, nutmeg, cinnamon, and vegan egg-nog, until smooth.
  12. When cookies are cooled, top with glaze and a sprinkle of cinnamon, if desired.

Fall time is my favorite season! You get to experience the leaves turning, harvest the best fruits and vegetables, then celebrate all the best holiday seasons – Thanksgiving, Halloween, and Christmas! I feel like the end of the year goes by way too fast and I want you to enjoy every single moment of it with the best vegan recipes. I don’t know about you, but I have been a huge fan of Taylor Swift for some time her album seems to drop around the Fall time. So in light of Taylor Swift’s new album, Midnight, I have veganized Taylor’s infamous Pumpkin Spice Cookies, so you can feel like she made you her favorite cookies.

Instructions
  1. Preheat oven to 350F, and line a cookie sheet with parchment or a silicone baking mat.
  2. In a large bowl, or the bowl of your stand mixer, cream together the sugar and butter using the paddle attachment, until light and fluffy.
  3. Mix in the aquafaba and maple syrup until well incorporated.
  4. Add the canned pumpkin and mix until well combined.
  5. In a separate large bowl sift together flour, baking powder, salt, cinnamon, allspice, nutmeg, and cloves, and mix well.
  6. Add the flour mixture to the pumpkin mixture and mix well.
  7. Using a tablespoon, or a 1 tablespoon cookie scoop drop the cookie dough onto the prepared cookie sheet.
  8. Bake for 10 minutes, or until they are lightly golden around the edges.
  9. Remove them from the oven and allow them to cool on the sheet for about 10 mins before moving them onto wire cooling racks.
  10. Meanwhile, in a large mixing bowl or bowl of your stand mixer, prepare the frosting by whipping the cream cheese with the paddle attachment until white and fluffy.
  11. Add the powdered sugar, and slowly begin to beat it until smooth, slowly upping the speed. Add the vanilla and meat until combined.
  12. Slowly add the plant milk until you get your desired consistency. Fold in the lemon zest and set aside.
  13. Once the cookies have cooled, spread the tops with the frosting.

Grilled Salted Oatmeal

Chocolate Chip Cookies 

Do you ever get bored of cooking the same way, using the same method every time? I totally get it! That is why I decided to test out different recipes on my BBQ Grill and to my surprise, I made the best Grilled Salted Oatmeal Chocolate chip cookies! Yes, I have made grilled salads, pizzas, and now cookies on my Napolean. Vegans have no excuse to not participate in BBQs anymore!

 Pro Tips:

  • Preheat your grill for 10-15 min.
  • Make sure you’re baking over indirect medium heat. If you can’t grill indirectly: place a metal cake pan upside down or use bricks on the grills and then place the baking sheet on top to bake.
  • Don’t open the grill before the time is up, this will allow too much heat to escape.
  • In-between batches, make sure you let the grill come back up to temperature (350F).

If you thought vegans couldn't join in all the BBQ festivities, I am about to prove you wrong! Because I am going to show you how to make cookies on a BBQ Grill. Yes, this is not your average salted oatmeal chocolate cookies baked in an oven!

Ingredients
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp kosher salt
  • ½ cup rolled oats
  • ¼ tsp cinnamon
  • ½ cup (1 stick) unsalted vegan butter, room temp
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • ½ tsp vanilla extract
  • 3 tbsp aquafaba
  • 6 oz dark chocolate, roughly chopped
  • optional: ½ cup walnuts, roughly chopped
  • Coarse sea salt
Instructions
  1. Preheat grill or bbq to between 350F and 375F, and grease a baking sheet.
  2. In a small mixing bowl, combine the flour, baking powder, kosher salt, rolled oats, and cinnamon.
  3. In a large mixing bowl, combine the butter, brown sugar, and granulated sugar. Using an electric hand mixer, beat together the butter and sugars until light and fluffy, 2 to 3 minutes. Beat in the vanilla. Add the aquafaba one tablespoon at a time and beat until well combined.
  4. Using a spatula, gradually add the flour mixture into the batter-sugar mixture. Mix until just combined. Fold in the chocolate and walnuts, if using.
  5. Spoon tablespoon-size balls of dough onto the baking sheet, leaving about 2 inches between the dough balls.
  6. Scoop the chilled cookie dough onto the baking sheet. Make sure to leave about 2 inches between scoops.
  7. Place the baking sheet on the grill, close the lid and grill for 10-13 mins, or until just beginning to golden.
  8. Remove the cookies from the oven and sprinkle each one with a few grains of sea salt … it’s really important to do this while the cookies are hot so the salt sticks. Let the cookies cool for a couple minutes, then transfer to a cooling rack. Repeat with the remaining dough.

Vegan Carrot Cake

Carrot Cake is a classic Fall time recipe. If you haven’t found your favorite carrot cake recipe yet, this one might be the one. I love making baked recipes when I am working from home and don’t have too much time to cook. Since living alone, I never enjoyed doing the dishes, and baking always allowed me to bring back more time in the day.

  • You can add your favorite nuts (walnuts, pistachio, pecans) to this recipe to add that extra crunch to your carrot cake.
  • To make carrot shredding faster, you can use a processor.

This is the easiest carrot cake you will ever make!

Instructions
  1. Preheat oven to 350F and grease 2-10 oz ramekins and set aside.
  2. In a medium bowl, cream together sugar, melted butter, aquafaba, and vanilla with a whisk or with an electric hand mixer.
  3. In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.
  4. Add the dry ingredients to the wet and mix well.
  5. Add the milk and mix again, then fold in the grated carrot.
  6. Pour into the prepared ramekins and bake for 20 minutes or until a toothpick inserted in the center comes out clean.
  7. Transfer to a wire cooling rack and allow it cool.
  8. Once cool, frost with vegan-friendly cream cheese frosting.
Notes
technically it makes 2 cakes, one for now and one for tomorrow!
