Vegan Meat Ball Glaze

I’ve made other vegan meatball recipes from scratch before, but simplicity is all you need to make a wholesome meal. By using less than 10 ingredients, this super budget-friendly recipe will be a great staple in your cooking journey.
Alternative ways to make this recipe:
If you are allergic to soy milk, you can always omit this process and replace it with any non-dairy option. This step is there to help smoothen out the texture of the meatballs.

Vegan Meat Balls
Meatballs are such a classic, that you can throw them into your favorite pasta dishes, and add them to your meal prep recipes or simply enjoy them as is. There are endless combinations you can pair with these delicious meatballs. The balance of the sweet and juicy meaty texture of this recipe will be almost shocking when you share it with your non-vegan friends!
How many servings does this make?
This recipe makes about 20 small meatballs. You can always increase the size by doubling up your recipe.

INGREDIENTS:
Meatballs
- 1 lb Veggie ground beef like, impossible or beyond meat
- 1/2 cup crushed cornflakes
- 1 1/2 tsp mustard any type works
- 1/4 tsp salt, or to taste
- 2 tbsp aquafaba
- 1/4 cup- 1/2 cup unsweetened soy milk (use to smoothen out texture as needed)
Glaze
- 1/4 cup packed brown sugar or coconut sugar
- 3 tbsp vinegar
- 1 1/2 tsp mustard
- Preheat oven to 350F and grease 2 lipped baking sheets (15x10x1-in).
KITCHEN EQUIPMENT:
- 1 lb Veggie ground beef like, impossible or beyond meat
- ½ cup crushed cornflakes
- 1½ tsp mustard, any type works
- ¼ tsp salt, or to taste
- 2 tbsp aquafaba
- ¼ cup- ½ cup unsweetened soy milk (use to smoothen out the texture as needed)[be]
- ¼ cup packed brown sugar or coconut sugar
- 3 tbsp vinegar
- 1½ tsp mustard
- Preheat oven to 350F and grease 2 lipped baking sheets (15x10x1-in).
- In a large bowl mix together; veggie ground, crushed cornflakes, mustard, salt if using, and aquafaba.
- Shape the mixture into 1-in. balls, and place onto the prepared baking sheet.
- In a small small pan over medium-high heat, stir together brown sugar, vinegar and mustard. Continue stirring until the sugar is dissolved, and remove from heat.
- Lightly pour some of the glaze over meatballs, bake until browned and cooked through for 15-20 mins, flipping or stirring them halfway through.
- To serve: Gently toss the meatballs in the remaining glaze. You can serve them as a meal or with toothpicks as an appetizer.
